Southern cooking has long celebrated the combination of pork and beans, with lima beans traditionally simmered alongside smoky bacon or ham to create rich, comforting dishes. Our interpretation brings that familiar pairing to the center of the plate with a thick cut, dry-aged Duroc pork chop and Southern-style lima beans.

Figs add a touch of sweetness to complement the richness of the pork, while fresh alfalfa brings a lighter, vegetal note to the dish.
