Whipped Ricotta (V) | Figs, Brown Butter Pecans, Florals, Focaccia Across Italy, fresh ricotta is often paired with the natural sweetness of figs, toasted nuts, and rustic bread - a simple combination that celebrates the beauty of fresh ingredients. Our interpretation brings those familiar flavors together with whipped ricotta, fresh figs, brown butter pecans, and focaccia, finished with an abundance of colorful florals and herbs. The result is as vibrant on the plate as it is bright and fresh in flavor. Share it with the table during your next visit. Open Tuesday through Thursday, 4PM - 11PM Friday & Saturday, 4PM - Midnight Reservations available. Walk-ins welcome on a first come-come, first-served basis. by @proof_lancaster

Duroc Pork Chop (GF) | Southern Style Lima Beans, Nueske Bacon, Figs, Alfalfa Southern cooking has long celebrated the combination of pork and beans, with lima beans traditionally simmered alongside smoky bacon or ham to create rich, comforting dishes. Our interpretation brings that familiar pairing to the center of the plate with a thick cut, dry-aged Duroc pork chop and Southern-style lima beans. Figs add a touch of sweetness to complement the richness of the pork, while fresh alfalfa brings a lighter, vegetal note to the dish. A familiar Southern foundation, given a distinctly Proof perspective. Find it on the menu during your next visit. Open Tuesday through Thursday, 4PM - 11PM Friday & Saturday, 4PM - Midnight Reservations available. Walk-ins welcome on a first come-come, first-served basis. by @proof_lancaster
