Palak Patra Bites

These bite-sized patras are a quick and delicious twist on the traditional recipe.
They’re perfect for breakfast, tea-time, or packing into a lunchbox.

Ingredients
* Besan – 1 cup
* Red chilli powder – 1 tsp
* Turmeric powder – ½ tsp
* Coriander powder – 1 tsp
* Jeera powder – 1 tsp
* Garam masala – ½ tsp
* Asafoetida – ½ tsp
* Jeera – 1 tsp
* Sesame seeds – 4 tbsp
* Ginger-green chilli paste – 1 tbsp
* Jaggery powder – 1 tbsp
* Tamarind pulp – 2 tbsp
* Oil – 1½ tbsp
* Water – ¼–½ cup
* Salt – to taste
* Baking soda – ¼ tsp
* Spinach – 2 cups, finely chopped

For the Tempering
* Oil – 1 tbsp
* Mustard seeds – 1 tsp
* Sesame seeds – 1 tsp
* Curry leaves – 8–10
* Fresh grated coconut – for garnish

Method
1. In a bowl, combine all the ingredients except the baking soda and mix into a thick, smooth batter.
2. Just before steaming, add the baking soda and gently fold it into the batter.
3. Pour the batter into a greased steaming tray or plate and steam for 10-12 minutes until firm and cooked through.
4. Allow it to cool completely, then cut into bite-sized pieces.
5. Heat oil in a pan and prepare the tempering.
6. Add the patra bites and toss gently until lightly crisp.
7. Garnish with fresh grated coconut and serve warm.
Tips
• Add the baking soda only just before steaming for the softest texture.
• Let the patra cool completely before cutting to get neat, clean bites.
• Toss the bites gently while tempering to prevent them from breaking.

I’ve spent a ton of time (and too much energy) focused on how hard the past few years have been.

But somewhere and sometime along the way, it all started to become pretty awesome. And “Why is this my life?” has become, in so many ways, “How is this my life?” in all the best ways.

this wall has lived many lives but I think this plate rack version one is my favorite (icymi, waiting on the final detail! brass rails) comment 'supplies' for a list of what was used & the 'fit! #platewall

Another day, another stage 💙
Yesterday in Berlin, back in Munich this morning. The delayed flight made things a little nerve-racking, but in the end everything worked out smoothly 🫶
And now I’m already preparing for the next projects
