| Boscia, the new restaurant at Tswalu Kalahari, opened in August 2026 under the creative direction of Luke Dale Roberts.

Built into the earth beneath a century-old farmhouse and surrounded by shepherd’s trees, the restaurant has been conceived as an extension of the safari experience, with the Kalahari landscape shaping everything from the setting to the ingredients on the plate.

The five-course menu is led by Head Chef Dillan Kannemeyer and his team, bringing together Luke Dale Roberts’ classical European training and Asian influences with ingredients including venison, tsamma melon, Kalahari salt, local dates and wild rosemary. Preservation sits at the heart of the kitchen, with fermented, pickled and preserved ingredients forming part of Boscia’s evolving story.

A dinner at Boscia is included for guests staying two or more nights at Tswalu, while from October 2026 the restaurant will also open to the public for Saturday lunches.
