APPLE ALMOND BOSTOCK.

Bostock is a notoriously underrated pastry in my opinion. It’s not the most glamorous pastry and I understand that some may not be inclined to go eat or make it when you just look at it but let me tell you, it is the tastiest little pastry ever. It’s super a customizable pastry and is quite unfussy with a high payoff on flavor, texture and taste! You can use any bread soft buttery bread you like but I love to use a nice plush, soft buttery brioche and then you kind of let it dry out a little bit and soak it in whatever syrup or milk you like so you kind of get this like bread pudding, French toast situation, but not but not as soaked. Once the bread is soaked, you can put on any frangipane you like so literally you can go wild. I love to do a classic brown butter almond frangipane. And to seal the deal you pick whatever fruit you desire, some poached rhubarb, a strawberry jam, a lemon curd! The possibilities are endless. It is the first day of fall so we are going with some nice sticky apple compote and and then you just shower everything with a ton load of nuts right before it goes in the oven. Once out of the oven they are literally so soft and fluffy inside but just a little crisp on the edges. You finish off with a shower of powdered sugar and it is truly life-changing.
