This was worth the 6hr cook time!!!
Big chunky pork shoulder steaks cooked over low and slow all day in the @kamagearhq v2 max (I might have to get the mini... These looked tiny on those grates πππ)
Seasoned up with @theflavourforge red cooked with some @slim_ricks_bbqschool cherry wood until it hit 89c internal then off for a rest for a couple hours.
Whilst resting made a lovely coconut black bean rice, this was really good!
Whipped up a fruity bbq glaze using @wazs_sauce_hut hawaiian tropics sauce with some maple syrup and apple cider vinegar. Then on to the pork for another 15 mins on the bbq to tack up!
The pork was stunning all rendered down soft and tender but not too soft that it was pulled pork texture.
Really pleased with how these turned out!!

That glaze has set beautifully. Were the shoulder steaks wrapped for the two-hour rest, or left uncovered before going back on to tack up?
