Failed attempt.
This is a dish I submitted to a competition.
It didn't get selected ๐
An upgrade of our Bone Marrow.
Topped with reversed braised birria with a mustard and habanero emulsion. Mignonette style red onion and a color palette inspired by Dia de Muertos colors.
I feel it deserves a new lease of life on our menu.
