Beef Pot Roast 🥩🥕🥔 (via @_luubbaa) Fall-apart beef, tender carrots and potatoes, and a rich herb broth made for spooning over creamy mashed potatoes. This is my kind of cozy family dinner, with everything slowly roasting together until the beef pulls apart with a fork. 💾 SAVE this recipe for your next comfort food night & SHARE it with someone who loves a hearty homemade meal! Serves 6 🛒 Ingredients • 4 lbs beef chuck • Salt, black pepper and garlic seasoning, to taste • Olive oil • 1 onion, chopped • 2 celery stalks, chopped • 4 garlic cloves, minced • 4 tbsp tomato paste • 3 tbsp flour • 4 tbsp Worcestershire sauce • 1 quart beef broth • 4 carrots, peeled and chopped • 6 yellow potatoes • Fresh or dried rosemary • 3–4 bay leaves • Mashed potatoes, for serving 👩‍🍳 Directions Preheat the oven to 350°F (180°C). Pat the beef dry and generously season all sides with salt, pepper and garlic seasoning. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef on all sides until deeply browned, then remove and set aside. Add the onion, celery and garlic to the same pot. Cook for about 2 minutes, until fragrant. Stir in the tomato paste, then add the flour and mix until the vegetables are evenly coated. Pour in the Worcestershire sauce and beef broth, stirring well to combine. Return the beef to the pot. Arrange the carrots and potatoes around it, then add the bay leaves and rosemary. Cover and roast for 3–4 hours, until the beef is fork-tender. Remove the bay leaves and serve the beef and vegetables over creamy mashed potatoes, with plenty of the sauce. For years, I was afraid of what people might think of me. ❤️ I worried about being judged, about people not understanding me, and about what would happen if I showed this side of myself to the world. And looking back, I realize how much time I spent worrying about things that hadn’t even happened yet. Accepting myself didn’t happen overnight. It took time to become comfortable with who I am, to stop questioning whether it was okay to enjoy the things I love, and to realize that I don’t need everyone’s approval to be happy. I’m a guy who loves dressing up, doing makeup, wearing heels and expressing a feminine side of myself. And for a long time, I struggled with accepting that those things could simply be part of who I am. But here’s something I’ve learned along the way: you don’t have to fit into someone else’s expectations to be happy with yourself. 💕 And I think that’s something so many of us struggle with, whether it’s about how we look, what we wear, who we love, or simply being a little different from what others expect. These days, I’m much more comfortable being Julia. I go shopping, go out, meet new people and enjoy moments I once thought I’d never have the confidence to experience. Of course, I still have insecurities. We all do. But I’m no longer letting the fear of being judged decide what I can or cannot enjoy. If I could tell my younger self one thing, it would be this: Don’t spend so much of your life worrying about what other people might think. You deserve to enjoy being yourself, too. ❤️ And if you’re reading this while struggling with accepting a part of yourself, whatever that may be, I hope you’ll give yourself the time and kindness you deserve. Life is too short to hide the things that make you happy. 🥹💕 What’s something you’ve learned about accepting yourself as you’ve gotten older? ✨ #SelfAcceptance #BeYourself #Confidence #Crossdressing #SelfLove
