Apple season is in full swing, and thereโ€™s nothing I love more than a homemade caramel apple. The secret to getting the caramel to stick to the apple is to quickly boil your apples in water first. ๐ŸŽ A quick dunk in boiling water takes off the waxy coating on store-bought apples, so the caramel grabs on instead of sliding off. With some toffee bits on the bottom, these are a truly delicious fall treat! Caramel Apples (makes 8) ๐ŸŽ 8 large tart applesโ€จ๐Ÿฅข 8 wooden chopsticks or sticksโ€จ๐ŸคŽ 2 cups packed brown sugarโ€จ๐Ÿฅ› 1 can (300 mL / 14 oz) sweetened condensed milkโ€จ๐Ÿฏ 1 cup light corn syrupโ€จ๐Ÿงˆ 1 cup butterโ€จโœจ 2 tsp vanilla extractโ€จ๐Ÿฌ Toffee bits for the bottoms (optional, but highly recommended) 1๏ธโƒฃ Dip the apples in boiling water for a few seconds to remove the wax. Dry well and let cool.โ€จ2๏ธโƒฃ Push a stick into the bottom of each apple, and line a baking sheet with parchment.โ€จ3๏ธโƒฃ In a medium saucepan over medium-high heat, stir together the brown sugar, condensed milk, corn syrup and butter.โ€จ4๏ธโƒฃ Bring to a boil, then turn down to medium. Keep stirring constantly until it reaches 248ยฐF (120ยฐC) on a candy thermometer, about 25โ€“30 minutes.โ€จ5๏ธโƒฃ Take it off the heat and stir in the vanilla.โ€จ6๏ธโƒฃ Working quickly, dip and twist each apple to coat, letting the extra drip off.โ€จ7๏ธโƒฃ Roll the bottoms in toffee bits while the caramel is still warm, then set them on the parchment to firm up. Actor RJ Mitte, best known for his role as the defiant son of drug kingpin Walter White in the drama series Breaking Bad, has died aged 34.
