Last fall when I was just a couple days postpartum, we tried making the perfect apple fritter recipe. We did multiple rounds of testing and trial and error, but as time went on the recipe was lost! This fall, we tried it again and they turned out perfect, largely thanks to baking the apples before adding them to the dough. Apple fritters can often be too claggy thanks to the extra flour needed to soak up the apples’ moisture, but this method allows for less flour in the dough without reducing the apples. The result? A much softer, pillowy fritter studded with sweet apples.

Apple Fritters with Maple Glaze

Ingredients:
For the Apples:
4 medium apples, diced (I used honeycrisp apples)
1/3 cup light brown sugar
1 ½ tsp ground cinnamon
½ tsp pumpkin pie spice
1 ½ tbsp butter, cut into small cubes

For the Dough:
2 ¼ teaspoons (7g) dry yeast
¼ cup (55g) warm water (110°F)
5 tablespoons (62g) granulated sugar, separated
4 ½ cups (585g) all-purpose flour, plus extra for dusting
1 cup (220g) milk
¼ teaspoon (2g) kosher salt
2 large eggs (104g)
1 teaspoon (5g) vanilla extract
6 tablespoons (86g) unsalted butter, room temperature

For the Maple Glaze*:
2 ½ cup powdered sugar
4 tbsp maple syrup
¼ cup milk
¼ cup butter, melted
½ tsp cinnamon
Pinch of salt

Instructions:
Prepare the Dough: In the base of a stand mixer, whisk together the yeast, water, and 1 teaspoon of sugar. Let it rest for 5 to 7 minutes. Add the flour, milk, remaining sugar, salt, eggs, and vanilla. Knead the dough for 4 to 5 minutes until well combined. Cover with a kitchen towel and let rest for 10 minutes. Make a hole in the middle of the dough and add the room temperature butter in the middle. Knead the dough for 10 minutes. Cover with a kitchen towel and let rest for 5 to 6 minutes. Continue to knead until the dough should look smooth and no longer stick to the bowl. If it is not ready, continue to knead and rest periodically until it is ready.
