See a lot of guys skip this step, or even worse, go straight into this without skiving off the old glue first. This does more than just make the leather look even, it helps with the strength of your bond and the penetration of your glue. Lots of little steps to have a perfect glue job.

Is it best to sand down to a even level, or where it looks like rough suede? I know some 11s I work on, one side goes down level the other is rough suede look. But I’d don’t want to sand to deep where I’m penetrating the leather

Sanding isn’t necessary when you know how to properly remove the old adhesive and how to bond the surfaces correctly. The key is proper adhesive removal and bonding technique.
