Steak Frites w/ Entrecôte Sauce 🥩🍟🌿

For the fries:
4 Russet Potatoes

1. Cut potatoes into thin batons. Soak in salted ice water for 30 min. Dry and fry at 300* for 6-8 min.

2. Freeze for an hour.

3. Fry again at 375 till golden brown and season w salt

Entrecôte Sauce:
2 sticks Butter (unsalted)
1 Shallot
Sage
Tarragon
Parsley 
1 tbsp Caper
3 Anchovy 
3 Walnuts
Salt and pepper
1 Egg Yolk
1 tbsp Dijon
1 tbsp Worcestershire

1. Cook shallots in butter until translucent.

2. Transfer to blender and blend with sage, tarragon, parsley (idk herb about, just eyeball bro), capers, anchovy, walnuts, salt and pep.

3. Blend till green and smooth

4. Combine yolk, dijon, Worcestershire in separate mixing bowl. Pour blended mixture in and whisk. Taste for seasoning.
