🍲 Some days call for a little bowl of comfort!
When you want something warm, simple, and nourishing without making a big meal, this ginger bone broth soup comes together in about 10 minutes. Perfect for a chilly fall day when you’re craving something light and soothing.
We started with our chicken bone broth and pasture raised, corn and soy free eggs, then added a little freshly grated ginger and sea salt to taste. We chose bok choy and fresh basil for this bowl, but those are completely optional. Keep it simple or add your favorite vegetables or shredded chicken.
Ginger Bone Broth Soup
Ingredients
• 1 quart of our chicken bone broth
• 4 corn and soy free eggs
• Freshly grated ginger, to taste
• Sea salt, to taste
• Optional: bok choy, fresh basil, or your favorite veggies
Directions
1. Warm the bone broth in a small or medium pot until gently simmering.
2. Add the freshly grated ginger and sea salt to taste.
3. If using bok choy, add it to the broth and let it soften.
4. Gently slide the eggs into the simmering broth. Cover and cook for about 3–5 minutes, until the whites are set and the yolks are cooked to your liking.
5. Ladle into a bowl and finish with fresh basil, if desired.
That’s it! A handful of simple ingredients and a warm, comforting meal in minutes.
