UBE VELVET MARSHMALLOW FLUFF COOKIES.
Okay I’m quite obsessed with the texture on these cookies. They are so fudgy and gooey and stay soft for dayyyyssss. The ube flavor provides a subtle hint of coconut and vanilla. I use a mix of purple sweet potato powder and ube extract to achieve the purple color and flavor profile. My favorite part is this marshmallow fluff swirl, it just adds this wonderful chewy, gooey texture to the cookie. These are highly addictive…. I think these would be so fun as a monster themed cookie for Halloween too!
