BEEF FAJITA ROLLS 🌶️🥩🔥 (RECIPE BELOW!!)

Have you tried rolling your fajitas like this?!

Ingredients:

1½ lbs shaved beef
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 white onion, thinly sliced
1 tbsp avocado oil
Salt & black pepper, to taste

For the Salsa:
3 guajillo chiles, stems and seeds removed
2–3 chile de árbol, adjust for spice
2 garlic cloves
1 tsp chicken bouillon
1 cup hot water (for soaking and blending)

Toppings:
Fresh cilantro, chopped
Diced onion
Queso fresco, optional

Directions:

1️⃣ Soak the guajillo and chile de árbol in hot water for 10–15 minutes until softened.

2️⃣ Blend the softened chiles with garlic, chicken bouillon, and about ½ cup of the soaking water until smooth. Add more water as needed.

3️⃣ Lay out the shaved beef and add a few strips of red bell pepper, yellow bell pepper, and onion to each portion. Roll tightly and secure with toothpicks if needed.

4️⃣ Heat avocado oil in a large skillet over medium-high heat. Sear the beef rolls on all sides until browned and cooked through. Work in batches if needed.

5️⃣ Pour some of the chile salsa over the rolls and let simmer for 2–3 minutes so the flavors come together.

6️⃣ Top with fresh cilantro, diced onion, and crumbled queso fresco if desired. 🌿🧀

7️⃣ Serve with extra salsa and ENJOY! 🔥

These are perfect for an easy, high-protein dinner packed with flavor!

Remember Robyn on Top of the Pops?

On 15 August 1997, 18-year-old @robynkonichiwa performed Do You Know (What It Takes) on British TV.

Taken from her 1995 debut album Robyn Is Here, the track was co-written by Robyn and produced by Denniz Pop and Max Martin. A Top 10 hit in her native Sweden in 1996, it became her US debut single in 1997, reaching #7 on the Billboard Hot 100 and UK #26.

Long before Dancing On My Own, Robyn was already making big waves internationally. And that voice!

Do you have a special memory of this song or Robyn's early years?
