My niece came to visit and had one request: baked pasta.

The funny thing is, she’s not a big fan of red peppers or tomatoes when they’re fresh, so I thought, why not roast them and blend everything into a creamy sauce?

And guess what? She loved it. She’s even started eating red peppers since then!

The roasted vegetables are blended with cream and fresh basil, then tossed with pasta shells and Parmigiano-Reggiano and baked until golden. My favorite part is definitely those crispy edges, and the burrata on top adds the perfect creamy finish.

Baked Red Pepper Shells with Burrata

Ingredients
2 medium-large red bell peppers, halved and seeded
6 medium Roma tomatoes, halved
2 medium shallots, peeled and halved
1 whole head garlic, top trimmed to expose the cloves
2 tablespoons extra-virgin olive oil, divided
Kosher salt, to taste
¾ cup heavy cream
4-6 fresh basil leaves
10 ounces (285 g) medium pasta shells
⅔ cup freshly grated Parmigiano-Reggiano, divided

For Serving
1 ball burrata (about 4 ounces), torn into pieces
Freshly grated Parmigiano-Reggiano, to taste
Red pepper flakes, to taste
Extra-virgin olive oil, for drizzling
4-6 fresh basil leaves, whole or torn
