A sad week for the television community with the passing of Susan Saint James and Barbara Barrie. Both were wonderfully talented actresses who brought so much individuality, warmth and depth to their work. I had the pleasure of working with them on Kate & Allie. My thoughts are with their families and friends. -L🌷

This Halloween we’re making soup inside a pumpkin while dressed as a family of clowns. 🤡

Recipe
A large pumpkin about 10inch in diameter and height
3 medium carrots
3 stalks of celery
2 cobs of corn
2 medium garlic cloves, minced
2 tbsp minced ginger
2 bone in skin on chicken thighs and 3 full chicken wings roasted at 400f for 30 minutes
4 cups chicken broth
1 bay leaf
Salt and pepper to taste

Brush the outside of the pumpkin with olive oil and bake for 2.5-3 hours at 400F.

For a smoother blended soup, you can remove the chicken and corn from the soup and add in 1/4 cup of heavy cream, then using a spoon you can scrape some of the pumpkin flesh into the soup and blend with an immersion blender until smooth.

If we ever make this again, I would roast the celery and carrots together with the chicken to soften them up more so they blend more smoothly at the end. I would also add in half an onion, small diced and a tablespoon of honey at the end to bring out the pumpkin flavor more.
