The quick and easy one-pan dinner I go back to time and time again. It’s so delicious and perfect for those busy evenings when you just want to throw everything into one dish and let the oven do the work. Definitely give this one a try and let me know what you think!

Method/ Recipe (serves 6)
- Roughly chop 2 onions, I like to keep them quite chunky then spread them across the bottom of an ovenproof dish.
- Add your chicken. We usually use 2 packs of boneless chicken thighs.
- Add your tikka masala paste. For 2 packs of chicken thighs, we use around ¾ of a jar, but you can add more or less depending on how strong you like it.
- Add a few tablespoons of Greek yoghurt, I normally just eyeball this and give everything a really good mix.
- Cover and leave to marinate in the fridge for a few hours.
- When you’re ready to cook, pop it in the oven at 180–190°C for around 45 minutes, or until the chicken is completely cooked through.
- Just before serving, stir through a tablespoon of crème fraîche or cream, top with fresh coriander and serve with rice.

So simple, so good and barely any washing up 🙌
