I'd argue that changing Malfoy to Malfoid dramatically improves the story. Draco Malfoy is a caricature of JK's real life female school bully. As he's a depiction of someone JK hated, Malfoy doesn't get a satisfying arc or any real character progression. Now, if you change the character to female, then Malfoid works so much better. Instead of being effeminate and weak, Malfoid just becomes a classic mean girl. Her bullying of HP starts due to his rejection of her offer of friendship, is fuelled by her family views on status, then her obsession gradually transforms into a crush. A redemption arc, through love, fits the story far better than any actual romance that JK wrote in the books. Instead of the tacked-on relationship with Ginny, HP and Malfoid begin their relationship history from the very first book. Every interaction builds towards the climactic moment they finally get together, making rereads much more rewarding. Malfoid also fixes the problem of all Slytherin being evil, which JK has admitted is an issue. As the houses currently exist in the books, why would House Slytherin even exist? Why would you train up new generations of obviously evil wizards? The entire premise is deeply flawed, but if you introduce Malfoid as someone who is not inherently evil, it redeems the entire Slytherin house concept.

I think Malfoid's appeal comes from combining three male romantic fantasies in a really effective way. First, the growing-up-together fantasy: a girl who spends years alongside you, gets to know who you really are, and only then falls in love with you. It's something built through familiarity, trust, rivalry, bad moments, and years of accumulated intimacy. There's something powerful about the feeling of "she knows me completely and still chose me." Second, she has agency. She doesn't exist just to be "the protagonist's girl." She has her own life, goals, family, conflicts, status, and narrative importance roughly on Harry's level. She doesn't simply orbit him. So when the romance finally happens, it feels like a genuine choice rather than something the plot assigned to her. And then there's the ojousama-tsundere fantasy: proud, difficult, emotionally guarded, always hiding behind a wall. Part of the appeal is slowly getting past that wall until you become one of the very few people who gets to see the vulnerable person underneath. It's not just about "winning the girl"; it's about earning her trust and becoming someone she allows to see a side of her that almost nobody else does. So Malfoid hits several things at once: long-term familiarity, romance growing out of rivalry and friendship, the feeling of being genuinely chosen, a woman with her own identity and agency, and the fantasy of slowly breaking through the defenses of someone who initially seems completely unreachable. I think that explains a lot of why the idea resonates so strongly.
