-NA

Estrangement typically occurs on a continuum—and parents don’t always recognize the signs, says Kristina Scharp, a communication professor at Rutgers University who studies the issue. Think of a scale from one to 10, where 10 is full contact between parent and child and one is none. In between, there is a slow pullback: fewer calls and visits, less access granted. “It’s a myth that estrangement is always all or nothing,” Scharp says. Scharp identified eight characteristics of estrangement, or areas in which adult children who are pulling away from their parents change their behaviors or feelings. All of these behaviors occur on a spectrum, and not all are at play in every estrangement, Scharp says. People may also fluctuate, moving closer—or away—from a parent at different times. If parents understand this, they may be able to improve the relationship. “The continuum is where the compromise can exist,” Scharp says. Read more at the link in our bio. 🎨: @solcotti for WSJ

10 month update making doubanjiang from scratch Last winter I started the process of fermenting fava beans to make doubanjiang at home (lots more about doubanjiang on my Substack newsletter, Ugly Pantry). It’s finally peak pepper season, so I am back to finish the process I started. It doesn’t necessarily take a whole year to make this, since the fava beans can be fermented alone for just a month or two. The extra fermentation time allowed the beans to develop more savory characteristics and some meaty brown flavors. In my research visiting producers in Pixian County (what Champagne is to sparkling wine, but for doubanjiang), I learned that fresh and dried chilis can be used together to control the moisture content and consistency of the final product. Climate and terroir play a huge role in the fermentation process, so I was curious to learn what New York might produce. I’m planning to let this ferment for another three months before cooking with it.

Rip @male 🕊️ - RJ Mitte is best known for playing Walter White Jr. in the hit television series Breaking Bad, where he portrayed the son of Bryan Cranston’s Walter White. Like his character, Mitte has cerebral palsy, and his performance brought greater visibility to actors with disabilities in mainstream television. Throughout the series, his character serves as an important part of Walter’s family life, highlighting the personal consequences of the choices made throughout the story. Outside of acting, Mitte has worked as a producer, model, and advocate for greater inclusion in the entertainment industry. His career has helped demonstrate the importance of creating more opportunities for performers with disabilities in film and television.
