October in the garden 🍅🌿🍆

Our garden is still giving us a little something, even as the days get shorter! I took a walk through at sunrise this morning and gathered the last of the eggplant, tomatoes, and fresh basil. With some leftover bread on hand, I made homemade breadcrumbs and turned it all into a batch of meatless eggplant meatballs.
There’s something so satisfying about starting the day in the garden and turning what you harvest into something delicious in the kitchen. From garden to table, using what we have, wasting less, and savoring every last bit of the growing season. ❤️
