After a great hike along Red Creek Dolly Sods Wilderness Preserve we stopped at a local BBQ joint. The question I posed to some locals was Lindy Point or Table Rock? Lindy Point was the winner and how beautiful it was. Despite not getting the sunset I was hoping for the group of photographers piled in together for this shot were great! A lot of conversation and laughter. Definitely recommend hitting this spot!

I have no real words to rightly describe what happened on 10.10.26. I have no lofty revelation of what God is doing, I simply don’t have it 🥺. Honestly, I am still processing everything. But there are a couple things I can say. I can confidently say in this day and hour God is stirring His sons and daughters in a unique way that is bringing a type of unity to the body of Christ that we have not seen in a very long time. I can say that no man can take credit for what took place on 10.10.26, no one person could manufacture the gathering of 80k people in one place to pray. Seriously, Who can do that other than God 😭?!?! I can say it is an absolute honor that we, the Body of Christ, were able to see His works real time and can testify of the testimony of Jesus to the generations to come of how Access was part of His story. And lastly, I can say I know first hand that God is not looking for perfection from His people but indeed will and does use broken vessels with willing hearts 🥺. Access was truly the Lords doing and it was marvelous in our eyes.

another one pot wonder but she’s baked this time! ♥️ one pot baked tortellinis ✨ * 4 ish tbsp high quality olive oil like @oliva.dorado * 1/2 yellow onion (diced) * 5-6 cloves of garlic (diced) * 7-10 white mushrooms (sliced thin) (also optional) * 1/2-1 tsp Calabrian chili paste (adjust for spice preference) * 4-5 tbsp tomato paste * 4-5 tbsp sun-dried tomatoes (diced) plus about 1 tbsp oil * 28 oz crushed tomatoes (I love the ones with basil for pasta recipes) * 16 oz cheese tortellinis (refrigerated but could also use frozen) * 2 cups chicken or vegetable broth (add more if needed) * 1 ish cups heavy cream * 2 cups spinach * 1/2 cup ish of freshly grated Parmesan cheese * 1-2 cups of shredded mozzarella Seasonings: about 4 tsp Italian seasoning or 2-3 tbsp of each dried basil, parsley, oregano (adjust more as needed) plus salt and pepper Preheat your oven to 375 degrees. In a large oven safe pot or Dutch oven heat the olive oil to medium high heat and cook the onions until soft. Add the garlic, Calabrian chilis, sun-dried tomatoes and oil, mushrooms, seasonings and tomato paste and stir to combine. Simmer until everything is soft and cooked through. Add the canned tomatoes, tortellini, and broth and stir to combine. Taste and season again with the all seasonings above. Simmer covered and on low until the tortellinis are almost fully cooked but are still a bit al dente. Then add the cream and parm, stir again to combine. Top with a generous layer of mozzarella cheese and bake uncovered for 20-25 minutes until bubbly. Finish the last 5-10 minutes under the broiler to get the cheese browned and crisp!
