HAPPY SUNDAYπŸ™STAY PRAYED UPπŸ™ @hallowapp πŸ™β€οΈπŸ™
My annual Halloween series is back, and I have six lovely recipes to share with you from around our Isles! From a traditional warming drink to Welsh Stwmp Naw Rhyw (nine sorts mash), English soul cakes and Scottish treacle scones, there's plenty of old-fashioned cooking and folklore to discover. We're starting in Cornwall with Allantide, when beautiful red Allan apples were traditionally given as tokens of good luck. Some were even tucked beneath pillows in the hope of dreaming of a future sweetheart! So I've taken inspiration from this lovely tradition to make a buttery, gently spiced upside down apple cake, studded with juicy apples and currants, with a beautifully caramelised apple topping. Not a historical recipe, but my own little nod to Cornish Allantide. Serves 8 to 10 Ingredients For the apple topping 40g salted butter, melted 60g light soft brown sugar 2 to 3 small red-skinned eating apples or @kissabel_apples 1 tbsp lemon juice For the cake 175g salted butter, softened @marksandspencer 150g light soft brown sugar 3 large eggs @steweeggs 225g self-raising flour 50g ground almonds 1 tsp baking powder 1 tsp ground cinnamon ΒΌ tsp freshly grated nutmeg Zest of 1 lemon 1 tsp vanilla extract 2 tbsp sour cream 2 medium apples, peeled, cored and finely diced 75g currants or mixed fruit Pinch of fine sea salt @cornishsea_salt Cornish clotted cream, to serve or custard Method πŸ’š Preheat your oven to 170Β°C fan. Grease and line a deep 20cm round cake tin, preferably solid-bottomed. Pour the melted butter into the lined tin and scatter over the brown sugar. Thinly slice the red apples, toss with lemon juice and arrange in overlapping circles across the base. Cream the butter and sugar until light and fluffy, then beat in the eggs one at a time. Fold through the dry ingredients, followed by the lemon zest, vanilla and sour cream. Finally, fold in the diced apples and mixed fruit. Carefully spoon the batter over the arranged apples and level gently. Bake for 55 to 70 minutes until golden, risen and a skewer comes out without wet batter. Cover loosely with foil if browning too quickly. . . . #cornishfood #britishfood #englishfood #applecake #upsidedownc
