Last weekend, I had the chance to travel to Izmir, Türkiye, to attend
@izmirgastrofest Under the theme Food and Memory, the festival made me reflect on everything behind a dish, beyond flavour and technique. Because gastronomy is also about memory, culture, territory and identity.
Recipes passed down from grandparents to grandchildren, dishes that take us back to our childhood, traditions that travel with people when they migrate… All of this is also part of what we eat and who we are.
And I think there’s something really beautiful about the idea that, when we cook and share a recipe, we’re not just passing on ingredients and techniques, but also a part of our history.
An experience full of new learnings, new flavours and an even greater desire to keep discovering different cultures through gastronomy.
