INGREDIENTS: 3 eggs Heavy/light cream 1–2 tbsp good-quality chilli oil 1–2 tbsp garlic confit (or 2–3 cloves minced garlic) Handful of cherry tomatoes, halved Fresh parsley Salt & freshly cracked black pepper Sourdough, to serve Avocado, finely sliced, to serve RECIPE: 1. Add the cream, chilli oil and garlic confit to a pan. Gently mix and let it warm over medium-low heat. 2. Add the cherry tomatoes and crack in the 3 eggs. 3. Season with salt and pepper, sprinkle over some parsley, and cover with a lid. 4. Cook on medium-low until the whites are completely set and the yolks are cooked to your liking. For jammy yolks, keep taking the lid on and off so you can control the cooking. 5. Finish with a little more parsley and chilli oil, if you like. 6.
