Chocolate Loaf with Coconut Cream &
Chocolate Ganache
Whisk eggs and sugar until pale, then mix in oil, milk and vanilla. Fold in flour, cocoa powder, baking powder and a pinch of salt.
Bake at 170°C until a skewer comes out clean, then cool completely.
Lightly soak with milk. Whip cold cream with icing sugar and vanilla, fold in desiccated coconut and spread over the cake. Chill for 1 nour.
Pour hot cream over chopped chocolate and stir until smooth. Cool until barely warm, pour over the coconut layer and chill for at least 2 hours. Slice and enjoy! ❤️❤️
