✨ VEGAN MACARONS ALL NOVEMBER! ✨

My vegan French macarons will be available at @theexquisitecreatures for the entire month of November, with rotating flavors throughout the month.

I'm excited to be participating in World Vegan Month through @veganizerpdx, celebrating Portland's plant-based community while supporting meaningful causes. A portion of proceeds from my macaron sales throughout November will benefit @bensfriendshope.

Ben's Friends is a peer-led recovery support group dedicated to helping food and beverage industry professionals navigating alcohol and substance use challenges. They provide a welcoming space for those seeking or maintaining sobriety.

The Portland chapter meets every Tuesday at 10 AM at the Bunk Bar, 1028 SE Water Ave.

World Vegan Month: Pain Au Nikki 💖🧁

This November, @painaunikki (previously known as Camellia Pistrina) will be making all your vegan macaron dreams come true! Macaron boxes with rotating flavors will be available at @theexquisitecreatures and @la_lucha_coffee popups. A portion of macaron sales benefits @bensfriendshope.

Special: Macaron Boxes at Exquisite Creatures
Vegan macaron boxes with rotating flavors filled with ganache, fruit, and specials (gluten free, contains nuts)

Special: Macaron Boxes at La Lucha Coffee (popup)
Follow @painaunikki on Instagram for popup details (gluten free, contains nuts)

Cause: Ben’s Friends
Ben’s Friends has been a nonjudgmental, peer-led community that continues to support me throughout my ongoing recovery from alcohol and substance use. With the long hours and physical and emotional demands of hospitality work, it’s estimated that 20% of food and beverage workers struggle with substance use, making compassionate support and healthier coping strategies essential to reducing harm and improving overall well-being.

From November 1 to November 30, enjoy vegan specials for a cause all month long. Each restaurant will be donating a portion of sales from their World Vegan Month specials. Visit veganizerpdx.com/world-vegan-month for the full list of participating locations.

Our dessert reveal is here for our pop up on Monday, Oct. 19 @norahpdx (Alberta location). Reservations available via link in bio.

The dessert is a PNW “Spumoni (a Naples molded gelato dessert with a variety of flavors).”

It’s everything we love about a spumoni with a fun spin. It will have hazelnut chocolate dacquoise, cherry geleè, and pistachio mint ganache.

We can’t wait for you to taste it!

London Winter things in hands (and more) by @painaunikki

Officially moved into the new kitchen in NE PDX ❤️ (the vegan comissary behind @offthegriddlepdx 2nd location off of Alberta)

FIRST POP-UP IN THE NEW SPACE:
9/7 Labor Day from 11 a.m. - 1 p.m.
Pre-orders & walk-ups.
Sign up via the 🔗 🌳 in the bio for pre-order alerts or the newsletter. Launching pre-orders in a few days!

Going to keep it simple the first pop-up ✨️
● Canelé (vanilla bean)
● Macarons (lemon? choco coffee?)
● GF Earl Grey Brownies (classic)

I'm still learning what I need in the new space and testing old recipes in new ovens. I have ideas and want to explore new baked goods. Plus, gotta test for new class offerings 👀

It's pretty cool to start baking on the side again (ontop of my FT pastry production /pastry line cook job at Kann lol). I'll be mainly doing pre-order pick-ups, macaron classes still, events, and chef collabs.

I'm still figuring out what it looks like to operate as a "chef" rather than a concept business. I'm hoping this chapter offers more developing work so there's more room for creating new flavors and teaching ❤️
