Happy Birthday, darling Jaki 🎂🥂!

A fabulous evening celebrating Jaki’s birthday with my lovely Viet sisters, @mrshuongblack and @papayaverte, at Akub @akub.london in Notting Hill. Feeling incredibly grateful to have these amazing women in my life.

The contemporary Palestinian food was absolutely delicious, the crafted drinks were beautiful, and we were looked after so wonderfully by Chef Fadi @fadi.f.kattan and his fantastic team. Thank you for making the celebration so memorable. Here’s to friendship, laughter, and many more special evenings together ♥️✨!

Had such a great day for our mini pop up today, selling Bánh mì đặc biệt ắt @grounded.coffee.bar

SOLD OUT within an hour! Made all the work of making the baguettes, cold cuts, Đồ Chua (pickles), Ớt Sa Tế (chilli & lemongrass oil) very worth it. Still stunned 20 Bánh mì went so fast 💛

Hi👋🏽 we’re having a mini Bánh mì pop up @grounded.coffee.bar 💛 this Saturday 18th, from 11:30am until sold out

Bánh mì đặc biệt/freshly baked Vietnamese baguette filled with cold cuts, pickles, cucumber, pate and chilli oil

We’re offering only one Bánh mì style atm, as we find our feet and move forward with this new adventure. Imagine us as the Bánh mì street vendor you’ve randomly stumbled across somewhere in Vietnam, a solo seller with their one option iykyk 💛

Still ~ Somewhere in my soul I’m still an Aussie 🇦🇺

Had a craving for Dimmies so had a go at recreating them. I remember buying them after school from the kiosk at the train station. Always one fried and one steamed, drenched in soy sauce and ready to fall through the soaked paper bag. Dimmies are brilliantly chunky and unsexy, originally created by Australia’s first Asian ‘celebrity cook’s Dad, so wiki says.

Anyway, in an attempt to be healthy so I air fried most of them which I slightly regret, because frankly they taste better deep fried in a vat of oil 🤷🏻‍♀️ by @thuycooks

Hi, we a little bit crazy with Bánh mì bread at the moment. Promise there’s an end goal and hope to share that news soon..

Meanwhile cooked up Thịt heo quay (crispy pork) yesterday and with the pickles, Viet butter, pate, chilli very tasty. I always thank my ancestors for putting together these delicious flavour combinations

What makes the perfect Bánh mì for you?

I ❤️ a Bánh Mì Đặc Biệt and Bánh Mì Ốp La…

Thìs is Bánh mì cold cuts, partial Đặc Biệt, homemade Viet style Char Siu cold cut, Dưa chua & Bơ (pickles & Viet butter) too lazy to make the pate, but shop bought a rich and smooth one instead

Everything needs a bit of tweaking here, to get it to be the perfect Bánh mì but we’re getting there

‘First day on the job’ as UK representative for @contimme Headed to London with my good friend @islandofdang who was kind enough to give up her day to support me (who’s actually my “sous chef” for Papaya Verte and an illustrator)

We were invited (short notice therefore the fast put together of our display!) by Vietnamese Family Partnership to their event celebrating Refugee Week. Everyone was so kind and welcoming, including giving us a bowl of pho immediately upon arrival

We met a lot of people who were very interested in the work Con Tìm Mẹ does and who took our note of our information. Had a slightly panicked moment when the organisers handed me microphone, told me to stand introduce myself, everything had been announced in Vietnamese beforehand and of course my brain had a meltdown and forgot my words 🤯 just a jumbled pile of English left my mouth, thankfully no photos of that moment (I think!)

In everything I approach, I believe in the long game and know that news will spread over time about Con Tìm Me’s work. Future ideas have been discussed with other UK Vietnamese organisations, which will combine my cooking and our charity, and I’m excited to see how that unfolds 💛

Whilst in London took in the Echoing Whispers: Treasury of Vietnamese Folk Tales exhibition at the Museum of Home, in Hoxton

A little impromptu capture of my lovely friend’s market stall @sophy_soeng @norwichmarketplace

Sophy asked me to mute her voice, as she thought she didn’t have anything clever to say 🥺, but I loved her cute intro & infectious laugh so kept that bit in! (Sorry Sophy, muted the rest though!)

We’ve been friends for years from the first days of being young mums and now at Aunty age. Sophy has helped me many times, with advice on ingredient availability for my jobs and has also ordered ingredients in especially.

Sophy is located in the Norwich Market, check out her new bit of corner, more space for customers iykyk 😊 Her shop has so many different Asian ingredients, fresh produce, noodles aplenty and also delicious lunch at Tasty House 🌷 taken in Norwich, Norfolk by @thuycooks

Bún bò Huế ít’s a long journey from the beginning of making this, building layers of flavours, to finally getting to sit down and have a bowl of BBH but it’s worth effort

Chè ba màu / 3 colour dessert

A three-colour dessert with three layers of colours: yellow (mung bean paste, jackfruit), red (sweetened red beans), and green (Aiyu jelly). It is served cold with crushed ice and coconut sauce

This one is for my beautiful fellow adoptee sister Huyen, as it’s her birthday today. We shared some special moments on our recent trip to Vietnam. Volunteering at the children’s centre, eating delicious food, keeping cool with all varieties of Chè Huyen could find us, and karaoke, where Huyen sang brilliantly (I did the team a favour and stayed quiet!).

Bún (phở) gà trộn

Cooking starts off as making phở gà, but turning the shredded chicken into a noodle bowl (using bún noodles) instead of Pho as is the preference. A bit of the broth combined with soy sauce, chilli, garlic and lime is mixed through along with Viet coriander and coriander, peanuts and shallots by @thuycooks
