Introducing Our November Filter Single Origin Ethiopia Yirgacheffe Wegida Village From the highlands of Wegida Village in Yirgacheffe, Ethiopia, smallholder producer Beyene Dori cultivates 3.5 hectares of traditional garden coffee at elevations over 2000 MASL. Now in his early 80s, Beyene continues to grow Kurume, a prized local landrace valued for its delicate, expressive character. Processed at the Ela Washing Station, carefully selected cherries undergo 60-72 hours of fermentation before being washed and slowly dried on raised African beds for 10 days. This meticulous approach showcases the clarity and complexity of this high-altitude coffee, revealing an elegant cup with sparkling bergamot aromatics, sweet peach, delicate black tea and a smooth toffee finish. Introducing Our Limited Release November Single Origin Colombia Las Flores Sidra Bourbon! Finca Las Flores is operated by third generation growers, brothers Carlos, Jhoan and Diego Vergara. With over 30 years of experience, the Vergara family are dedicated to producing superior quality coffee using innovative production techniques. Ripe cherries are harvested and undergo 48 hours of fermentation in plastic barrels, followed by thermal shock processing where the coffee is washed at 50°C. After a second anaerobic fermentation phase, a yeast formula is sprayed onto the cherries and left for a further 80 hours. Once fermentation is complete, cherries are sundried for 15 days and rigorously quality checked. The result is a coffee with an exceptional profile of burnt orange, star fruit, dark chocolate and cardamom. Online now! by @paradoxcoffeeroasters
