Whether as a brand studio or as editorial contributors, we’ve always enjoyed having the opportunity to highlight the work of mission-driven small producers. So when our pals @pastificioboulder asked us to collaborate on copy and photography highlighting their collaborations with local farmers and millers from the @coloradograinchain, we were an automatic “yes!” It’s been inspiring to see Claudia and Ted grow their business from a scrappy start-up to winning Good Food Awards and in their latest chapter, bringing even more pasta to the people with the forthcoming opening of their new Boulder retail shop! by @pastificioboulder

This Friday, we are offering a small batch of our fresh Paglia e Fieno Fettuccine. Meaning "straw and hay" in Italian, this traditional pasta features alternating ribbons of classic egg fettuccine and spinach-infused fettuccine. The contrast of golden and green strands creates a beautiful presentation, while the spinach adds a subtle earthy note that complements the rich flavor and delicate texture of fresh pasta. For this tasting, we are crafting the pasta with an organic blend of durum and Kamut® flour and will be offering both traditional egg pasta and egg-free versions. As part of our Insider Tasting Program (coupon code: AMICI), you can purchase up to one pound at 50% off in exchange for completing a brief 3-question survey about your experience. It will take less than 5 minutes, we promise! Pasta pickup: Friday, June 12, from 10:00 a.m. to 3:00 p.m. only at Pastificio (2430 30th Street, Boulder, 80301) We can't wait to hear what you think! Join us! Ravioli delle Erbe Selvatiche and Tagliolini Saturday June 20th at 10am. Immerse yourself in the beauty and pasta culture of Piemonte—a region in Italy with many similarities to our Foothills—where delicate pastas filled with regional ingredients are cherished by both the cosmopolitan city culture and rural traditions alike. The region’s pasta heritage brings together filled pastas, rich egg yolks, and mountain cheeses, complemented by treasures such as Barolo wine, truffles, and hearty fillings. Stuffed and egg-rich pastas are the signature of Piemonte, with each province offering its own distinctive shapes and fillings, deeply rooted in local tradition and craftsmanship. Join Claudia for this special series exploring the region’s most iconic stuffed pastas. Each class will last approximately 2½ to 3 hours. You’ll enjoy a tasting during the session and leave with the pastas you’ve crafted by hand. Ravioli delle Erbe Selvatiche – Traditional rustic ravioli filled with wild seasonal greens and herbs gathered from the hills and mountain areas of Piemonte. Common fillings include nettles, spinach, borage, dandelion greens, and local mountain herbs blended with ricotta or fresh cheeses. Delicate yet deeply flavorful, these ravioli reflect the region’s strong connection to the land and are often served simply with butter, sage, or light cheese sauces to highlight the freshness of the filling. Tagliolini – Delicate ribbon pasta from Piemonte, tagliolini are thin strands made with a rich egg dough that gives them a silky texture and deep golden color. Slightly wider than tajarin yet equally elegant, they are traditionally paired with butter, light meat sauces, mushrooms, cream, or the region’s prized truffles. Their refined texture and richness make them one of the most versatile and beloved long pastas of Northern Italian cuisine. *All pastas made and tasted in class will be vegetarian. Dear Pastificio Friends, We’re beyond excited to share that this summer we will be redesigning and transforming the front portion of our pasta workshop into a beautiful new Pastificio "retail" pasta shop experience — right here in Boulder. Our vision is to create a destination for exceptional Italian meals at home — featuring handcrafted fresh pasta, stuffed ravioli, signature Pastificio sauces, simple ready-to-bake pasta specialties, and carefully selected Italian pantry staples. Our thoughtfully curated dinner offerings are designed to make it easy for you to order, bring home, finish, and enjoy a delicious meal with family and friends. And coming soon: local delivery and catering services. Over the next few months, we’ll be renovating the space, developing new recipes, expanding our offerings, and building many exciting new elements. This new shop is a natural extension of our passion for creating exceptional food and helping bring great meals to tables throughout our community. Our goal is to open the new Pastificio shop this September. We look forward to sharing a place where great food, craftsmanship, and community come together. Throughout the summer, we’ll continue sharing select offerings, occasional fresh and stuffed pasta releases, previews of new sauces, and glimpses behind the scenes as the new shop begins to take shape. We’re also excited to expand our series of handmade pasta classes this summer, sharing the craft, traditions, and stories behind our pasta. Together, we’ll explore regional Italian shapes and recipes while experiencing the warmth of Italian culture through cooking, gathering, and enjoying a taste of our creations. Keep an eye out for upcoming class announcements—we can’t wait to cook with you. We are incredibly excited for what’s ahead and deeply grateful for the support, encouragement, and enthusiasm that have helped Pastificio continue to grow. Thank you for being part of this journey, and we look forward to sharing this next chapter with you. With love, Claudia and Ted #pastashopboulder #bouldercolorado #bouldereats #boulderfoodie #boulderlocal by @pastificioboulder
