It's national dessert day! 👀🥔🍫

It might sound unexpected, but mashed PEI potatoes make this chocolate cake rich, moist and seriously delicious.

Ingredients:
• 1 cup mashed PEI potatoes
• 1 cup warm water
• 2⅔ cups unsalted butter, softened
• 2 cups packed brown sugar
• 1 tsp vanilla extract
• 4 large eggs
• ¾ cup cocoa powder + 2 tbsp for dusting
• 2 cups all-purpose flour
• 2¼ tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• ¾ cup semi-sweet chocolate chips
• 2 cups of your favourite icing
• Large-flake sea salt, for sprinkling

Directions:
Preheat oven to 350°F. Lightly grease a 9×13-inch baking pan and dust with 2 tbsp cocoa powder. Whisk mashed potatoes and warm water together until incorporated. In another bowl, cream together butter, brown sugar and vanilla until light and fluffy, about 4-5 minutes. Add the eggs, 2 at a time, mixing well after each addition. In a separate bowl, sift together flour, cocoa powder, baking powder, baking soda and salt. With the mixer on low, alternate adding the dry ingredients and potato mixture to the creamed butter mixture. Fold in chocolate chips. Pour the batter into the prepared pan and spread evenly. Bake for about 30 minutes, or until the cake springs back when lightly pressed. Let cool completely, then spread with your favourite icing and finish with a sprinkle of sea salt!
