Musaafer Houston takes up two floors on Westheimer Road, all sweeping windows and a room built for a long dinner. Chef Mayank Istwal spent 100 days crossing 29 states of India before writing this menu, pulling recipes from home cooks and family plantations rather than the usual playbook.

One Michelin Star sits on a menu that reads like a travelogue of the subcontinent, plated with an eye toward presentation as much as provenance. It is fine dining that keeps its roots in tucked-away kitchens across India, translated for a Houston room.
