A few memorable moments from a wonderful evening in support of Canadian culinary talent @roadtoculinarygoldfundraiser 👏 It was such a pleasure to see so many familiar faces, reconnect with industry peers and alumni, and meet talented chefs from across the country, all coming together for a shared passion and a great cause! Our students had so much fun learning from and networking with some of the industry’s finest. Evenings like these are a lovely reminder of the connections that make our culinary community so special. We are so honoured to have been a part of this incredible evening and to support Team Canada Bocuse d’Or ✨ by @picachef
What an incredible evening for Canadian culinary talent! 🇨🇦 We were so proud to see our students working alongside some of Canada’s most talented chefs at the Road to Culinary Gold fundraiser for Team Canada Bocuse d’Or at the Sheraton Vancouver Wall Centre. The evening brought together an impressive lineup of culinary talent, including L’Abattoir’s Jasper Cruickshank, Top Chef Canada competitor Felix Zhou, Jesse Friesen (Winnipeg), former Bocuse candidate Scott Jaeger, Starri Chow and Fumiko Moreton (Sheraton Vancouver Wall Centre), Clement Chan (The Apron), Saeko Choi (Glowbal Group), Bryan Hendricks (Athabasca Catering), Roary MacPherson (Newfoundland), James Thomson and Billy Chan (Team Delta Burnaby), and chocolatier Thomas Haas. Chef Keith Pears kicked off the evening with an early meet and greet, while Christophe Bonzon of Chez Christophe treated guests to a showcase of his craft with a food station and live chocolate demonstration. With 13 chef-hosted food stations, Tinhorn Creek wine pairings, a chance to vote for the evening’s favourite small plate, and auctions supporting Team Canada’s Bocuse d’Or training, equipment and travel, it was a wonderful evening with a meaningful purpose. One of our favourite parts was reconnecting with familiar faces, including PICAchef alumni Chef Jonathan Lee @budojoe of @bandbsteak and Chef @tjconwi of @onovancouver. Always so rewarding to see our graduates thriving in the industry! A huge thank-you to the organizers, participating chefs, sponsors and everyone who came out to support Team Canada. We’re grateful to be part of such a generous and inspiring culinary community. ❤️ by @picachef

Congratulations to Pei-Ling Yu, recipient of our Top Student Award in Baking & Pastry Arts👩‍🍳💙 While studying Hospitality Management back home in Taiwan, Pei-Ling developed a strong foundation in the food and beverage industry. But she knew that to achieve the career of her dreams, she needed to learn the technique. She wanted to gain hands-on experience, strengthen her pastry skills and discover her creativity. Even during her gap year, Pei-Ling kept working toward her goal. She took courses in graphic design because she believes building her own brand is about more than just making delicious desserts. So when she discovered there was only one spot left for an international student, she took the opportunity and came to Vancouver. It wasn’t a sudden adventure. It was the next step toward a goal she had been working toward for years. 𝘐 𝘩𝘢𝘷𝘦 𝘢𝘭𝘸𝘢𝘺𝘴 𝘣𝘦𝘦𝘯 𝘤𝘭𝘦𝘢𝘳 𝘢𝘣𝘰𝘶𝘵 𝘸𝘩𝘢𝘵 𝘐 𝘸𝘢𝘯𝘵, 𝘢𝘯𝘥 𝘐 𝘢𝘭𝘴𝘰 𝘬𝘯𝘰𝘸 𝘸𝘩𝘢𝘵 𝘐 𝘴𝘵𝘪𝘭𝘭 𝘯𝘦𝘦𝘥 𝘵𝘰 𝘭𝘦𝘢𝘳𝘯. One day, Pei-Ling hopes to return to Taiwan and open a pastry shop of her own, a place filled with creativity, warmth and connection. Pei-Ling, your focus, determination, and commitment to learning have earned you this well-deserved recognition. Congratulations from all of us at PICAchef! We can’t wait to see what you create next. For anyone working toward a dream, Pei-Ling’s story is a reminder that every step counts. Knowing what you want is only the beginning. Having the clarity to recognize what you still need to learn, and the courage to pursue it, is what brings that dream closer to reality! by @picachef
SHUCK YEAH, it’s oyster class! 🦪 Our students had a hands-on lesson with @malinditaylor, a fifth generation shellfish farmer and Director of Sales and Marketing at @fannybayoysters. We learned why shellfish aquaculture is so important for protecting wild populations, how an oyster’s life cycle works, and the different methods used to farm shellfish. We also met the local oyster species available and learned how to shuck one properly. Special thanks to Malindi, for taking the time to share your family’s knowledge with our students! culinary school Vancouver, oyster shucking, shellfish aquaculture, sustainable seafood, Fanny Bay Oysters, BC oysters, culinary students, PICAchef by @picachef

FIELD TRIP TIME! 🍄‍🟫 Our Culinary and Baking & Pastry instructors and students headed outdoors for a mushroom foraging adventure, exploring the incredible local ingredients growing right here in our own backyard! With chanterelles and other delicious funghi coming into season across the Pacific Northwest, it was the perfect time to learn from the exceptionally knowledgeable Chef Robin and discover more about the foods that grow in our region. Along the way, we learned how to use environmental clues, such as what a mushroom is growing on or near, alongside identifying features like cap shape and gill structure to help identify different varieties. At PICAchef, we believe learning extends beyond the classroom. Connecting with local ingredients and understanding where our food comes from are important parts of our teaching approach, giving students a deeper appreciation for the ingredients they work with and the food they create 🌲 by @picachef
