Our grandfather started a tiny shop back in 1968 where he would make an extremely select batch of mithai himself, using the simplest of ingredients. Dad (left) took over this shop when he was still in the12th standard as grandfather's health deteriorated and has been there ever since - quite literally. He still loves to spend most of his time in the shop. We want to continue this journey following our grandfather's philosophy of making traditional mithai with authentic recipes. by @pistabarfimithai

We’re excited to introduce Bistaparfi, the fusion dessert arm of Pistabarfi. Our approach isn’t about westernising Indian mithai. It’s about Indianising western desserts. The idea is to take traditional Indian sweets in their original form and explore how they can live inside new formats, textures and experiences. Not as inspiration, but as the hero itself. For this first round of products, we wanted to stay true to the essence of the mithai while pairing it with high quality imported chocolate. We’ve used pure Colombian chocolate in three formats: 55% dark, 38% milk and 35% white chocolate. Here are some of the flavour combinations we’ve been experimented with: • A Pistabarfi Bonbon, where traditional Pistabarfi sits inside a chocolate shell with ganache. • A Mysore Pak Coffee Bonbon, inspired by the natural affinity between Mysore Pak and South Indian coffee. • An Aam Papad Bonbon with mango ganache encased in 55% dark chocolate. • A Pistabarfi Rocher with roasted almonds and crunchy crumble. • A Kajukatli, Raspberry and Shortbread cube that balances the richness of kaju katli with a slight tartness from raspberry. • A Mysore Pak, Lemon Cream and White Chocolate Bonbon. White chocolate is often difficult to pair with mithai because both can be intensely rich and sweet. The lemon helps cut through that richness while complementing the creamy texture of Mysore Pak. These are our first experiments. Some will stay, some will evolve, and some may disappear altogether. Right now, the objective is simply to learn, gather feedback, and understand which flavour combinations resonate most. For the moment, Bistaparfi will be available only in Mumbai. Pure chocolate is far more sensitive to heat than compound chocolate, and with peak summer temperatures, we want to ensure the products reach customers exactly as intended. This is our first step into a new direction. We’re excited to see where it leads. Come see us at our exclusive kiosk in @foodstories_in Bandra to try our fusion range by @pistabarfimithai

Pistabarfi @pistabarfimithai is a Mumbai-based mithai brand with family roots in a small shop opened by the founders’ grandfather in Parel, Bombay, in 1968. Continuing his approach of using simple ingredients and authentic recipes, the brand makes traditional Indian sweets fresh to order (from kaju katli and pista barfi to Mysore pak and gur ladoos) with offerings for everyday indulgence, celebrations and gifting. by @pistabarfimithai
Among the many unexpected collaborations this year, Pistabarfi coming together with Puma ( @pumaindia ) was certainly one of the most surprising. But how did a brand rooted in giving traditional mithai a modern twist find synergy with a global sneaker giant? By recognising that not every collaboration needs to result in entirely new products. Instead, both brands tapped into their shared love for re-fashioning’nostalgia’—leading to Puma’s classic Palermos being paired with Pista Barfi’s mithai packaging, designed in the same colour palette. A fresh, unexpected, and playful chapter for both. Co-founder Harshit Agarwal sheds light on the process, emphasising that there’s no one-size-fits-all formula for collaboration—only clarity of intent that opens the door to truly unique possibilities. by @pistabarfimithai
A little Pistabarfi trivia. Many people have asked us where the name Pistabarfi comes from. The answer goes back to 2017, when @ohshitharshit was dabbling in his first startup venture, a fusion dessert brand with friends @reynoldo_o & @dhawal_shah At a time when very few people were experimenting with Indian sweets in contemporary formats. There were ideas like a Motichoor Carrot Cake Entremet, a deconstructed Falooda made with rose barfi and chia seeds, a Rabdi & Gulab Jamun Tart, Paan Truffles, and Badam Katli Marzipans. Traditional Indian flavours presented in contemporary formats. While trying to find a name that captured this idea of tradition meeting experimentation, a common friend @unaizamerch suggested taking an existing mithai and simply interchanging the letters. And so, Pista barfi became Bista parfi. A familiar name with a small twist. Much like the desserts themselves. But while the ideas were exciting, the business didn’t quite work out. The venture shut down within a year. At the time, it felt like a failure. A few years later, when brothers Harshit and Tanay decided to take their family’s mithai legacy forward, they knew they wanted to focus on traditional Indian sweets. That’s when Pistabarfi as a name came back into the picture. The name wasn’t chosen by accident. The plan was always to bring Bistaparfi back one day. Pistabarfi would be the home for traditional mithai. Bistaparfi would be the space for experimentation, fusion, and new formats. And now, almost a decade later, things have finally come full circle. Bistaparfi returns as the fusion dessert arm of Pistabarfi although Bistaparfi came first. Looking back, it’s a reminder that not everything that feels like a failure actually is one. Sometimes ideas simply need time. What feels like an ending today can quietly become the foundation for something much bigger tomorrow. We’re excited to revisit some of those old ideas, create many new ones, and finally allow the original vision of Pistabarfi and Bistaparfi to coexist exactly as they were always meant to. Here’s @bistapurfi for you to check out the failed experiment that became the bedrock for पिस्ताबर्फी by @pistabarfimithai

Earlier this year, we made one of our most unique mithais, and it was quite a fun challenge for us. For the launch of Puma’s Palermo sneakers in a Jamun colourway, we experimented with something we’d never made before: Jamun Barfi. Jamun has a naturally tart flavour, and we hadn’t really seen it being used in traditional mithai. So we decided to give it a shot, using real jamuns to create something completely new. Just a little throwback to one of our favourite experiments, where we got to play around with traditional mithai and an unexpected flavour. Stills • @ohshitharshit by @pistabarfimithai
