Third season of growing our own vegetables on a small island in Norway. Nodig organic gardening🌝

POSTS STORIES REELS

Who knew a 7 kg zucchini could taste just as good as the smaller ones? But definitely a different taste, more like a squash/pumpkin 🥒🌱💚 I bet they store even better with that thicker peel. Anyone else had experience with this?

Apples → applesauce or frozen in cubes for winter
Cores & peels → fizzy soda or vinegar

🫧 Apple scrap soda
Cores and peels from 6–8 apples + 1 L water + 2 tbsp sugar in a clip-top jar. Room temp 2–3 days, burp it once a day, strain and keep it in the fridge.

🍶 Apple scrap vinegar
Same start, but cover with a cloth instead of a lid. Stir daily, strain after 3–4 weeks and let it mature.

How many cucumbers am I holding? 🧐

Here’s what we’re doing with all of it 👇

🥬 Shred your cabbage finely and weigh it
🧂 Add 2% salt (20 g per kg of cabbage)
👐 Massage for 5–10 minutes until it’s wet and juicy. Basically a spa day for cabbage
🫙 Pack it tightly into a clean jar, pressing down as you go
🥒 Add extras if you like. I added cucumber and dill in one jar and apples in the other one
💧 Push everything under the brine. Weigh it down with a whole cabbage leaf on top and a «weight»
🔓 Put the lid on and «burp» it every day so the gas can escape
🌡️ Let it ferment in room temperature and out of the sun for 1–3 weeks. Start tasting around day 5
❄️ When it tastes right to you, move it to the fridge, where it keeps for months

A thin white film on top is harmless, so just skim it off. Fuzzy mold or a rotten smell means it goes in the compost.

Why is pulling a carrot this exciting?? I was actually nervous 😂

Manpukuji, 500 g each. No pipes, just soil, so they grew fat instead of long 🥕😂

CABBAGE ASMR🤷🏼‍♀️

A teaspoon of healthy soil holds more life than there are people on Earth. 🌱 Feed the soil, it feeds you😋

Garlic, ginger and honey have been used as folk remedies for centuries🔥

This might be the easiest ferment there is. No salt, no starter, no cooking.

How I make it:
-Peel garlic and lightly crush the cloves. Slice some fresh ginger.
- Fill a jar about ⅓ full and cover completely with raw honey (pasteurised won’t ferment) and a splash of apple cider vinegar.
- Loosen the lid and burp the jar daily. Flip it for the first week to keep everything coated.
- After 3–4 weeks the honey turns runny and golden, and the garlic mellows. It keeps for months.

I take a spoonful in salad dressing, in tea or eat a clove straight when it’s cold and dark out.

⚠️ Not for babies under 1 (honey). Safety: garlic can carry botulism spores. Add apple cider vinegar from day one to make it safely acidic, then confirm with pH strips (under 4.6).

The easiest and best way to use up a glut of zucchini 🫶🏼

Slice, salt for 1 hour, squeeze, mix with flour + corn starch + a pinch of baking soda, olive oil, herbs, beets, onion & garlic. Spread on a baking tray, drizzle with oil, salt and pepper, bake until golden & crisp.
