POSTS STORIES REELS
AMARU IS MORE THAN A NAME. ITโ€™S OUR STORY. In 2019, Chef Rodolfo Cuadros opened Amaru in Chicagoโ€™s Wicker Park neighborhood with a vision rooted in culture, heritage, and the belief that food has the power to bring people together. Inspired by Tรบpac Amaru, a name associated with resistance, dignity, and the fight for equality, Amaru represents something deeply personal to Rodolfo as a Colombian American. For seven years, weโ€™ve poured our hearts into building more than a restaurant. Weโ€™ve built a place where our culture, our community, and our stories have a home. Recently, we learned that another restaurant named Amara is preparing to open in Chicago. The similarity has already led to confusion, with people asking whether weโ€™re opening another location. For an independent restaurant, a name isnโ€™t just branding. It represents years of sacrifice, countless hours of work, and the trust of a community that has supported us from the beginning. This isnโ€™t about competition. Itโ€™s about identity, respect, and the hope that thereโ€™s room for a conversation. As Rodolfo shared with Ravenous: โ€œI donโ€™t want bad blood, you know, like with anybody.โ€ We respect the passion and hard work that goes into opening any restaurant. Weโ€™re simply asking for that same consideration for the identity weโ€™ve spent seven years building. We are AMARU. Proudly independent. Proudly rooted in our heritage. Proudly serving Chicago since 2019. To everyone who has shared a meal, raised a glass, supported our team, or helped tell our story: thank you. You are the reason Amaru continues to exist.
