Nigiri, Through Ceremony’s Lens

I was invited back to @enjoyceremony for Nigiri Week, a Japanese inspired tasting built around seafood and vegan nigiri. I tried both menus, and this was easily one of the best sushi experiences I’ve had in the 757.

We started with daikon and carrot dressed in sesame yuzu, followed by miso soup with bok choy, tofu and enoki mushroom. Then came two very different approaches to nigiri.

The seafood plate featured salmon, tuna and torched black bass. The vegan plate moved through marinated tomato, eggplant and king oyster mushroom, and avocado with tofu.

What stayed with me was how well the flavors were handled. There was heat, citrus, acidity and spice, but nothing overwhelmed what was underneath it. The seafood tasted incredibly fresh. So did the vegetables. And after watching @profitdachef take a torch to that black bass, getting to taste the finished bite made that course even better.

The vegan nigiri was also a reminder that vegetables don’t have to imitate seafood to belong in this kind of tasting. They were treated as ingredients worth building a bite around in their own right.

A Japanese inspired nonalcoholic wine pairing accompanied the tasting, followed by yuzu granita with ginger and mint and house vegan matcha ice cream with mandarin and black sesame.

I’ve covered @enjoyceremony before, so I don’t need to introduce them again. What I appreciate is watching the restaurant continue to experiment. There is intention in the sourcing, but also in what happens once those ingredients reach the kitchen.

Thank you to @itsmecs3 for the invitation and to @profitdachef for the execution. This was a damn good menu.

Keep your palate open. You never know what might surprise you. by @profitdachef

Nigiri week at @enjoyceremony was a success! Can’t wait for the fall menu 💫

Staff meal is one of our favorite parts of the day.⁣
⁣
Chef gets to create on the fly, and the rest of us sit down and talk about whatever comes up. Last week it was aliens and the meaning of life 😂⁣
⁣
That’s one of the things we love about sharing food. It creates space for conversation and connection.⁣
⁣
Last night, a party of five walked in for drinks, and it reminded us that cocktails can do the same. The conversations around the table were varied.⁣
⁣
Next week we launch our cocktail program.⁣
⁣
Classic and modern originals, thoughtfully reimagined without alcohol.⁣
⁣
Join us Thursday through Saturday from 5–9 PM for composed small plates and craft cocktails, and see where the conversation takes you.⁣
⁣
Cheers! 🥂⁣
