NEW BEANS : LAS TROJAS COUNTRY : GUATEMALA CULTIVAR : BOURBON REGION : HUEHUETENANGO PROCESS : WASHED FLAVOUR NOTES : CHERRY, CITRUS, ALMOND, VANILLA PRODUCER : RODRIGO GARCÍA HARVEST : MARCH 2026 ROAST : LIGHT Roasting the Bourbon Washed from Las Trojas, Huehuetenango, Guatemala, harvested in March 2026. Beans grown at high altitude are dense and take on heat slowly. We roast this coffee light to keep its cherry and citrus fruit notes and the sweetness of almond and vanilla. Available as filter coffee and in 200g bags at our shop in Hyoja-dong, and in 1kg bags at EVERYDAYRECEPTION.COM. by @reception.seoul
WHY TEMPERATURE? WHY TEMPERATURE? : How does coffee change as it cools How the flavour of coffee changes as its temperature drops is one of the things we pay close attention to in roasting. When hot, the aroma feels full and the flavours blend together softly, while as the temperature drops the structure of acidity and sweetness comes through more clearly, and bitterness or astringency that was hard to notice at high temperature can stand out as well. So in roasting, rather than an intense flavour at one specific temperature, what matters is whether the balance of flavour holds as the coffee cools. To get there, from the early to the middle stage of the roast we make sure heat is delivered fully and evenly to the inside of the bean, and in the later stage we adjust so that excess heat does not leave bitterness or a dry finish. At the same time, we manage the overall flow of the roast so that the acidity and sweetness the bean already has can come through naturally. After roasting, at the cupping table, we follow the cup not only while it is hot but as it turns lukewarm and cools completely. New flavours appearing as the temperature changes is one of the pleasures of drinking coffee. A good coffee is not one that necessarily tastes the same hot and cold, but one that shows a different side at each temperature while keeping its overall balance and a clean finish. by @reception.seoul

On Thursday, October 29, we hosted Monthly Coffee Meets at RECEPTION. Eight single origins from RECEPTION and DAK Coffee Roasters went on one table and were cupped over an hour. All eight cups were prepared with the same grind size, the same amount and temperature of water, and the same time. With the conditions held equal, you can experience and compare the flavours in each cup far more clearly. Six processing methods were on the table that evening, washed, honey, natural, anaerobic natural, anaerobic washed and multi stage washed, so you could see in one sitting what each process does to the flavour. Three of the four coffees from DAK had gone through anaerobic fermentation or a multi stage washed process. RECEPTION's El Recreo and DAK's Poppy Soda are both Pink Bourbon from Colombia. One is honey processed and the other multi stage washed, and going back and forth between the two cups, you can taste clearly what processing does within the same cultivar. The flavours written on a cup note are also much easier to find when there is a cup next to it to compare. Thank you to everyone who joined us and to DAK Coffee Roasters. The coffees from the table are available at our Hyoja-dong shop and online store, and Monthly Coffee Meets continues in November with new coffees and a new theme. by @reception.seoul
효자동 매장과 온라인 스토어 EVERYDAYRECEPTION.COM에서 구매하실 수 있습니다. A French press recipe from RECEPTION. With a few simple steps it brews consistently at home, and it works well with light roasts. An easy method for a weekday morning. Pour the water, and get ready for work while it steeps. 20 g coffee, 300 g boiling water Steep 4 to 5 minutes, then rest 1 to 5 minutes before pouring 1. Preheat the press with hot water and discard it just before brewing. 2. Grind 20 g of coffee at medium, around filter brewing coarseness. 3. Pour half of the 300 g of boiling water, stir gently, then add the rest. Leave the lid off for now. 4. Steep for 4 to 5 minutes. 5. Push the crust down with a spoon, stir 3 to 5 times, then skim the pale foam off the surface. 6. Put the lid on and lower the plunger slowly. It should move without force. 7. Wait 1 to 5 minutes, then pour. Stop when sediment starts to appear. Too coarse a grind gives a sour, thin cup. Grinding coarser does not remove sediment, so adjust with the resting time before you pour. Take the press apart and wash every part after use. The coffee here is MACARON from Dak Coffee Roasters, available at our Hyoja-dong shop and online at EVERYDAYRECEPTION.COM. by @reception.seoul
NEW BEANS : LAS TROJAS
The last week of October. Come by RECEPTION for a warm filter coffee while the afternoon sun stays long. by @reception.seoul

Sharing the AeroPress Clear recipe we use at RECEPTION. It gives a clean cup with good flavour development, which suits light roasting. Now that the mornings have turned cold, a warm cup of filter coffee is a good way to start the day. 15.5 g coffee, 230 g water, 93-94°C Total brew time 1:30-1:40 1. Pour all 230 g of water and insert the plunger. 2. Steep for 1 minute. 3. Remove the plunger and stir 3-5 times. 4. At 1:10, remove from the scale and start pressing. 5. Finish pressing between 1:30 and 1:40. The same numbers give different results depending on your coffee and grinder. If the cup tastes thin, grind a little finer; if it tastes muddy, go a little coarser. The AeroPress Clear is available at our Hyoja-dong shop and online at EVERYDAYRECEPTION.COM. by @reception.seoul
