Grilled salmon, baby potatoes and green beans, all tossed in a mustard vinaigrette. It comes together in minutes, especially if you already have cooked fish on hand.

For the salad:
1 cup flaked salmon
2 cups boiled baby potatoes
1 cup green beans, blanched so they stay crisp and fresh

For the dressing:
2 tbsp whole grain mustard
2 tbsp olive oil ( I use my @jenin.ae 🫒 oil)
1 tsp maple syrup
A splash of apple cider or white wine vinegar
Juice of half a lemon
Salt and pepper to taste

Mix the dressing in a large bowl, then toss in the warm potatoes and beans so they soak up all the flavour. Add your salmon and give it a good mix. Serve it on a bed of rocket or any leafy green you like or enjoy it just as it is.

If you have leftover grilled salmon from the night before, even better. Otherwise, grill or roast a fillet with just salt, pepper, a little olive oil and some lemon. Tinned salmon works just fine too!

This year the phrase “you vs you” finally clicked. I stopped chasing the version of health I’d idealized in my head and turned inward. It’s the basics (nutrition, movement, connection, recovery) done consistently over time, that help me look and feel my best.

No shortcuts, no perfect plan. Just showing up for the basics, again and again 💛

Peaches are one of my favourite fruits and honestly one of the most versatile, so I’m using the last of the summer ones for this salsa.

Sweet peaches, smoky charred corn, quick pickled red onions and just enough heat from the jalapeños. Good with chips, grilled fish, or spooned over tacos.

Serves 2

For the salsa
2 ripe peaches, diced
1 corn cob, charred and kernels sliced off
½ small red onion, finely diced
½ red bell pepper, diced
½ green bell pepper, diced
½ yellow bell pepper, diced
½ jalapeño, finely chopped
2 tbsp fresh parsley, chopped
2 tbsp fresh coriander, chopped

For the dressing
1 tbsp olive oil
1 tbsp lime juice
1 tsp lemon juice
1½ tsp apple cider vinegar
¼ tsp salt
Pinch of black pepper

Start with the onions. Put them in the bowl with the lime juice, lemon juice and apple cider vinegar and leave them there while you prep everything else. They quick pickle in the citrus, which takes the sharp bite out and makes such a difference.

Char the corn over a flame or in a hot dry pan, then slice off the kernels. Add everything to the bowl with the onions, pour over the olive oil, season and toss gently. Let it sit for 10 minutes before serving.

Once peaches are out of season, swap in pineapple and it works just as well.

Save this one for your next taco night 🌮🍋‍🟩🌽🍑🍹

This mango slaw comes together in under 5 minutes. Crunchy, sweet, a little spicy, and the edamame makes it filling enough to have on its own or next to whatever you’re cooking.

Serves 2

For the slaw
1 ripe mango, cubed
1½ cups purple cabbage, thinly sliced
½ red bell pepper, thinly sliced
½ jalapeño, thinly sliced
½ cup shelled edamame
2 tbsp fresh coriander, chopped

For the dressing
1 tbsp olive oil
1 tbsp lime juice
1 tsp lemon juice
1 tsp apple cider vinegar
1 tsp maple syrup or coconut sugar
Pinch of salt

Whisk the dressing together in a big bowl, add everything else and toss. That’s it! Save this one for your next lunch 🥭🌶️🍋‍🟩

A couple of Fridays ago we sat down together, broke bread, and somehow ended up deep in childhood stories. I love how a table does that, takes you back in time and teaches you something new along the way.

Sitting in a room with that much warmth and respect is exactly the why behind my love for food culture and community. And the reason we are building @ggfoodclub .The region’s first culinary social club for women. DM to find out more about our membership.
