POSTS STORIES REELS

Zachary, from your first day of move-in to graduation day, it has been a privilege to watch you grow into the man you are today.
From those first few months of worrying about where you were or when you’d be back at the dorm (that will never stop), to pledgeship, to the joy and brotherhood of your fraternity, to Mustang football games we’ll always love sharing — it all somehow feels like a blur because it went so fast.
I wish I could repeat every stage of your life — it has all brought me such immense joy. Being your mom has been an honor and a privilege. Your hard work, perseverance, kindness, and determination have carried you through every challenge and milestone along the way.
SMU has given you so much more than a degree — lifelong friendships, unforgettable memories, a beautiful campus filled with tradition, and a culture that encourages connection and excellence. Watching you experience these years has been such a blessing.
We are endlessly proud of the person you’ve become and so excited for everything that lies ahead. No matter where life takes you, always remember how deeply loved and supported you are.

Congratulations, Zachary!

#SeniorSunday I haven’t posted in sometime so I thought I’d start back with Ms. Haley. She is such a beautiful child inside and out. God has blessed me to be able to call her my daughter. I can’t wait to see what her future holds. 💕 by @shonda1020

#Thankful ❤️ Lately…well lately has been awhile! This is a mix of college tours for Haley, birthdays (Zachary is 20 and Haley is 17 now), my new love for baked donuts 😆and everything in between. So many memories and so much love. It’s never just a pic, it’s the story and emotions behind the pic that stay in your heart forever. The older I get (47) the more I appreciate each and every minute life has to offer. I want to hold on to those I love and I’m so incredible thankful and blessed to have these people in my life. I couldn’t be more proud of the path Zachary and Haley are on. I know with God’s guidance they cannot fail. Happy Thanksgiving 🍁 by @shonda1020

Salmon Wellington not my normal “healthier” option but delicious so enjoy!
By @chefsofiaa

It’s a pretty fancy dinner, so you’ll be sure to impress your friends and family bringing this one out to the table 🥂

This salmon Wellington recipe takes your basic salmon to a whole new level. (Salmon Wellington, also known as Salmon En Croute)

🔪In a pan, heat butter, chopped shallots, and garlic over medium heat. Sauté until the shallots become translucent.
🔪Bring the heat to high and add the white wine. Let the liquid cook out for about 5 minute.
🔪Add the spinach. Sauté just until the the spinach softens (3 minutes). 🔪Add parmesan cheese and cream cheese.
🔪Place the salmon onto the puff pastry, add cheesy spinach mixture on top. Line a baking sheet with parchment paper and place the salmon wellington seam side down.
Make crosshatch slits on top of the Wellington with a knife. Then brush with more egg wash.
🔪Transfer the salmon a baking sheet lined with parchment paper, brush with egg wash and bake at 400 F (205C) degrees Fahrenheit for 25-30 minutes.

✅ Puff pastry can be bought at the store, it is sold in almost all stores. You can choose puff pastry with or without butter, also with lutein or gluten-free.

Lasagna with eggplant 🍆
By @chefsofiaa

•Olive oil: I recommend using a good quality extra virgin olive oil.
•Eggplant! You need 2 whole eggplant
•Chili flakes: A quarter teaspoon or a large pinch of chili flakes is optional, but I think it really adds something to this dish.
•Chopped tomatoes! I recommend mutti. The Mutti Chopped Tomatoes maintains all the freshness of freshly-harvested tomatoes. It’s a unique product because it is chopped especially finely for an abundance of tomato pieces in every bite and a rich, consistent texture.
•Fresh basil: Either use a whole bunch of fresh basil, or a tablespoon of Italian dried herbs of your choice.
•Mozarella (Fresh mozzarella is not the same as the mozzarella you get at the supermarket.
It’s fresh. Creamy. Sold in balls floating in whey. It’s the stuff they put on Neapolitan pizza)
•And of course the lasagna!
Lasagna sheets: You can either use fresh lasagna sheets or dried.

For the ricotta sauce:

•Ricotta cheese: Ricotta forms the basis of the sauce in this lasagna. No need to cook anything.

•An egg: Mixing an egg into the ricotta turns it into a spreadable consistency and will help it to set into a delicious layer in the oven.

•Garlic: This lasagna tastes gloriously garlic-y! Crush 4 whole cloves(I go for big ones!)for the sauce.

•Parmesan: You’ll need a whole cup of grated parm plus extra for sprinkling over the top of the sauce. by @shonda1020

Chicken Salad with Avocado Dressing
A delicious, simple salad by @nutriologa_anamaria

The chicken has a lot of flavor and with the creamy avocado dressing it is delicious!
The salad has a mix of lettuce, spinach, chopped shallot, yellow shelled corn, Persian cucumber, a little avocado and tortilla strips toasted in the oven.

Marinate 250g boneless chicken in 2 tsp avocado oil, 1 tsp smoked paprika #, 1/2 tsp garlic powder, 1/8 tsp chipotle powder, pinch of cumin and pinch of salt.

I let it rest for 20 minutes and then roasted it in a pan over medium-high heat.

The dressing:
1/3 piece of avocado
1 handful of cilantro
Juice from 1/2 to 1 Lemon
1 tbsp vinegar
3 tbsp of water
1 tbsp olive oil
Sea salt

Add water until desired consistency.

I hope you enjoy it! Tell me what you think
