Costa Rica Anaerobic Semi-Washed
Our newest coffee from Costa Rica is a bit of an anomaly. Brewed as an espresso, the citrus is quite punchy and is reminiscent of a dry, white wine. As a filter coffee, the delicate citrus and floral notes may start off subtle, but as this coffee cools, the brightness and acidity lent from the anaerobic process really starts to shine through. It’s a fun one to experiment with at home or whenever you come visit us at the shop!

✨ Costa Rica Honey — currently living its best life in our daylight roast and ready to be admired (and obviously tasted) anytime you swing by the roastery. It’s giving main character energy.
But wait, because the lineup is STACKED:
🔥 Guatemala Carbonic Maceration — light roast, insanely fruity, and absolutely wild on filter. Like… “who invited all this flavor?” wild.
🍍 Nicaragua Anaerobic Natural — another light roast superstar. Amazing for filter, beautiful on AeroPress, and yes… it can flirt with espresso too. Very versatile. Very cool.
🌟 El Salvador Anaerobic Natural (48h) — super clean, super interesting, and basically begging to be brewed on filter.
🍓 Ethiopia Natural — espresso lovers, this one’s for you. Juicy, bold, and dangerously drinkable.

There’s nothing like freshly roasted, transparently sourced, specialty coffee ☕️
A lot of flavor development in good coffee happens at the farm level, where farmers use various methods to ferment and wash the coffee beans.
Here Josh takes that flavor development one step further by carefully roasting the beans at the perfect temperature to bring out best flavors of the beans.
Then the beans are brought to Alex to be bagged so that we can ship them off to you!

For a long time, after-dinner coffee meant compromising on flavour - but having a lineup of high end decaf and low-caf options has been a total game changer for us. It means we can keep drinking high end coffee well after dinner without the 2AM ceiling-staring.
From house favorites to rare anaerobic processes, here’s what’s currently on the decaf menu:
Colombia Decaf de Cana: Our house staple. Sweet, pleasant, and arguably better in a flat white than most standard blends on the market.
2. Colombia Penas Blancas Pink Bourbon: A Swiss Water process that tastes like “strawberries in a cup.” We challenge you to pick this as a decaf in a blind tasting.
3. Colombia El Vergel Anaerobic: An anaerobic natural EA decaf from the same farm as our legendary Magnum Sidra.
4. Colombia Wilton Benitez Red Bourbon: The last of the thermal shock Red Bourbon. Get it before it’s gone until 2026!
5. Ethiopia Suke Quto Natural: Natural process Swiss Water. Roasting this Monday for the first time!
6. Plus, a special Low-Caffeine option from Wilton Benitez for those who just want a little spark.

A bit more about our new Peru Lima Co-Op blend: It’s a delicious medium roast with a smooth body interesting notes of maple, toffee, malt (for all you beer brewers, think barley malt in the mash tun), and a distinct note of sugar cane juice or cane syrup. Try it alongside some pancakes or sweet potato doused in Steen’s cane syrup (Looking at you, Louisiana friends!). Works great with all brewing methods, including espresso.
We recommend a slightly finer grind for drip at a 16.5:1 Water to Coffee ratio and for espresso a 2:1 Coffee in: Espresso out ratio by weight.
