Taiwanese breakfast when you’re not in Taiwan 🇹🇼🥢
When I was travelling in Taiwan, fresh soy milk and dan bing (蛋餅)were two things I looked forward to having for breakfast almost every day 🥹
Now that I’m back in Berlin, I decided to bring that breakfast craving home and make both from scratch.
Fresh Soy Milk 🥛
* 200 g dried soybeans
* 2 L water
* A little sugar, to taste
Method
1. Soak the soybeans in water overnight.
2. Rinse them well a few times.
3. Blend with 2 L of water until smooth.
4. Strain through a clean cloth.
5. Bring the soy milk to a boil, then simmer for 10–15 minutes, stirring often.
6. Add a little sugar at the end if you like.
Enjoy it warm as it is, or turn it into xian dou jiang (鹹豆漿) with vinegar, soy sauce and your favourite savoury toppings.
For cold soy milk, let the rest cool completely, pour into a clean bottle and keep it in the fridge for the next few days ❄️
Dan Bing (蛋餅)— Taiwanese Egg Crepe 🍳
Batter
* 45 g plain flour
* 15 g cornstarch
* 120 ml water
* Pinch of salt
* Chopped spring onions
Method
1. Mix everything into a smooth batter and let it rest for a little while.
2. Pour a thin layer into a pan over medium heat and cook until set. Remove from the pan.
3. Add a whisked egg to the same pan and place the cooked crepe directly on top.
4. Let them cook together, then flip.
5. Add whatever fillings you like — I went with ham, cheese and spring onions.
6. Roll it up, slice and serve warm with fresh soy milk.
A little taste of Taiwan at home 🤍🥛🥢

Fast food is not women’s liberation. No matter what the marketing says.
In the 1970s, fast food companies ran ad campaigns telling women that eating out, not cooking, was their path to freedom. KFC ran a whole campaign around it. And it worked. Cooking at home in America has been declining ever since, and it is not a coincidence that obesity rates have been climbing right alongside it.
We were sold a story that cooking was the thing holding us back, when in reality, walking away from real food has actually made us sicker.
True health isn’t about being rich enough to afford a private chef or the newest wellness trend. It’s about knowing how to cook, for yourself, with real, whole ingredients. That skill belongs to everyone, men included, and it always should have.
This has nothing to do with being a good woman in the kitchen, and everything to do with taking your health back into your own hands.

Cheesy Onion Rings 🧅🧀
Ingredients
Onion Rings
1 large yellow or white onion, sliced into ½-inch rings
Thin mozzarella cheese slices
Sticky Batter
1 cup all-purpose flour
2 tbsp cornflour (cornstarch)
½ tsp paprika
½ tsp garlic powder
Salt & black pepper, to taste
½ tsp baking powder (optional but recommended)
Cold water (add gradually)
Crispy Coating
1½ cups panko breadcrumbs
1–2 tbsp dried parsley
For Frying
Neutral oil (canola or vegetable)
Cane’s-Style Dipping Sauce
½ cup mayonnaise
3 tbsp ketchup
1 tsp Worcestershire sauce
1 tsp garlic powder
½ tsp black pepper
½ tsp paprika
Method
Soak the onion rings in ice-cold water for 10 minutes. Drain and pat completely dry.
Using three nested onion rings, carefully remove the middle ring. Cut thin mozzarella slices to fit into the gap left by the middle ring, then place the outer and inner rings back together to hold the cheese in place.
In a bowl, mix the flour, cornflour, paprika, garlic powder, salt, pepper, and baking powder. Slowly add cold water until you get a thick, glue-like batter, slightly thicker than pancake batter.
In another bowl, combine the panko breadcrumbs and dried parsley.
Mix all of the dipping sauce ingredients until smooth and glossy. Chill while you fry the onion rings.
Heat oil to 350–360°F (175–180°C).
Dip each cheese-filled onion ring into the batter, letting the excess drip off for 1–2 seconds. Coat generously with the panko mixture, pressing lightly so it sticks well.
Fry in batches for 2–3 minutes per side until deep golden brown, crispy, and the cheese is melted. Drain on a wire rack and serve immediately with the Cane’s-style dipping sauce.
