This orecchiette with broccoli, pancetta, and Pecorino is one of those simple Italian dinners that delivers big flavor with just a handful of ingredients. 📌Method: • Blanch the broccoli in salted boiling water until tender. Drain and set aside, keeping the water for the pasta. • Cut the pancetta into slivers. • Heat a drizzle of extra virgin olive oil in a sauté pan. Add the pancetta and let it render, then stir in the chili flakes and a garlic clove. • Add the broccoli, season with a pinch of salt and pepper, and sauté for about 5 minutes. • Meanwhile, cook the orecchiette (or your favorite pasta) in the reserved broccoli water. • Transfer the pasta to the pan a couple of minutes before it's fully cooked. Add a small ladle of pasta water and toss until everything is glossy and coated. • Turn off the heat, drizzle with a little more extra virgin olive oil, add grated Pecorino, and toss again. • Plate and finish with plenty more Pecorino. Simple ingredients. Real Italian comfort. Save this for your next busy weeknight, and share it with someone who's always asking, "What's for dinner? #ItalianFood #Orecchiette #WeeknightDinner #PastaRecipe #CookLikeAnItalian

A special day in Mugello with two lovely couples who came all the way from Tennessee. A true immersion into the colours and scents of late summer: we talked, laughed so much, explored local little shops and enjoyed an aperitivo by the river. Then we cooked together — eggplant, lots of fresh homemade pasta — and ended the day with a beautiful lunch in the garden at Bosco di Mezzo. Thank you to my new friends for such a wonderful day, and for already telling me they’ll be back next year. There’s a lot of noise about what oil you should cook with — especially when it comes to frying or sautéing. Most people focus on smoke points. But the real issue is how stable the oil is under heat. And high-quality extra virgin olive oil? It holds up — thanks to its polyphenols and fat profile. In Italy, I’ve seen people cook everything in EVOO — and their families are still living strong into their 90s and beyond. So I’m curious: 👉 If you live in Italy or come from a family that still cooks like they used to — what oil do they use, and why? 👇 Let me know in the comments. #ItalianAmerican #RealItalianFood #SeedOilsExposed #EVOOoverEverything #LongevityFood #AncestralHealth #CookLikeAnItalian #FoodThatHeals #OldWorldEating #OliveOilDebate
