GUMBO SEASON! 👩🏽‍🍳 For me, anyway. Felt a lil chill in the air, but it’s gone now. Maybe making gumbo will bring the cool weather back? 🔮 Anyway, gumbo to ME, MEGAN, a lil Creole girl out the 7th Ward, always has okra, crabs, shrimp, chicken and andouille, with a chocolate roux. NEVER ANY TOMATOES IDC IDC IDC NEVER EVER FOR ME. Tomatoes in gumbo reminds me of when @dillarduniversity kids were living at the @hiltonriverside. (Italian Night used to be bomb though!) 🫶🏾 I also love oysters in my gumbo, and hot sausage (not sausage that is hot, I mean hotsassih) is lovely too. 🥄

Tomorrow, October 12 is national gumbo day so I’ve decided to share my favorite gumbo recipe which happens to probably be the easiest gumbo recipe you’ll ever encounter. Make sure you tag me next time you cook a gumbo and let me know in the comments if you’ve a hot tip to make a great gumbo. 🧅🧄🫑🌱 There was a lot of info that I couldn’t fit into this reel so here is a list of tips, tricks, and fun facts. - don’t sleep on your sausage. I seasoned this gumbo with a pinch of salt only, that’s because the sausage I used is so good that it acts as the main seasoning for this gumbo - okra is the original thickening ingredient for gumbo which was brought over by African slaves. I only use okra (no roux) in most of the seafood gumbos I make - I one time ate a gumbo where the cook added shredded carrot to their trinity giving the gumbo a unique subtle sweetness. It was really good! - you can replace the duck meat from this reel with pulled rotisserie chicken giving you an easy sub - I prefer animal fats such as lard, tallow or even duck fat for my roux - I’ve experimented with almond flour instead of AP flour for my roux and it worked really well. Good tip for my gluten free folks - traditional ratio of trinity is 2 part onion, 1 part celery, 1 part bell pepper - where I’m from, putting tomato of any kind in a gumbo is a sin - gumbo is neither a soup or a stew but somewhere in the middle. It should be slightly viscous and easily spooned out of your pot - magnalite > cast iron for gumbo. Civet zourite🐙 🍲 Civet zourite — Recette 📝 Ingrédients • Zourite (poulpe), nettoyé • Oignons • Ail • Gingembre • Thym • Poivre • Tomates • 1 cuillère à café de curcuma • 3 clous de girofle • Vinaigre • Vin rouge • Huile • Sel (à ajuster en fin de cuisson) • Oignon vert ou persil (pour la finition) ⸻ 👩‍🍳 Préparation 1. Préparer le zourite • Plonger le zourite quelques minutes dans de l’eau bouillante. • Le retirer puis le couper en morceaux. • Le faire tremper dans de l’eau avec du vinaigre, puis bien égoutter. 2. Mise en marmite • Mettre le zourite dans une marmite. • Ajouter les oignons, l’ail, le gingembre, le thym, le poivre, les tomates, le curcuma, les clous de girofle et un filet d’huile. • Ne pas saler à ce stade. 3. Cuisson à l’étouffée • Cuire à couvert, sans ajouter d’eau, à feu doux pendant environ 30 à 40 minutes, jusqu’à ce que l’eau rendue par le zourite s’évapore. 4. Cuisson au vin • Ajouter le vin rouge à hauteur. • Laisser cuire à feu doux à couvert encore 30 à 40 minutes. 5. Réduction • Quand la sauce a bien réduit, ajouter un petit peu de vin rouge. • Laisser sécher légèrement sans couvrir. 6. Finition • Rectifier le sel. • Ajouter au dernier moment de l’oignon vert ou du persil. #974 #reunionisland #lareunion #974island #creolefood
