## 🧀🍒 Cranberry Brie Crostini with Walnuts 🍒🧀
These elegant cranberry Brie crostini combine crisp golden bread with creamy melted Brie, sweet-tart cranberries, crunchy toasted walnuts, and a drizzle of honey. Finished with fresh herbs, they’re an easy and beautiful appetizer for holidays, parties, and special gatherings.
🛒 **Ingredients:**
- 1 French baguette, sliced into ½-inch rounds
- 8 oz Brie cheese, sliced
- ½ cup dried cranberries
- ½ cup walnuts, roughly chopped
- 3 tbsp honey
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves
- 1 tbsp fresh parsley, finely chopped
- ¼ tsp red pepper flakes, optional
- Pinch of salt
- Freshly ground black pepper to taste
👩🍳 **Instructions:**
1️⃣ Preheat oven to **400°F (200°C)**. Arrange baguette slices on a baking sheet and lightly brush both sides with olive oil.
2️⃣ Toast the bread for **5–7 minutes**, flipping once, until crisp and lightly golden.
3️⃣ Remove the toasted bread from the oven and place a slice of Brie on each piece.
4️⃣ Return to the oven and bake for **3–5 minutes**, until the Brie is soft and beginning to melt.
5️⃣ While the crostini are warm, top each one with dried cranberries and toasted walnuts.
6️⃣ Drizzle generously with honey and sprinkle with fresh thyme and parsley.
7️⃣ Add a tiny pinch of red pepper flakes, salt, and black pepper if desired.
8️⃣ Serve immediately while the bread is crisp and the Brie is warm and creamy.
✨ **Pro Tips:**
- Toast the walnuts beforehand for a deeper, richer flavor.
- Don't overbake the Brie; it should be soft and creamy rather than completely melted.
- Use a crusty French baguette for the best texture.
- Add a little balsamic glaze for an extra sweet-tangy finish.
- For a holiday presentation, garnish with additional cranberries and fresh thyme.
🍽️ **Perfect For:**
- Thanksgiving appetizers
- Christmas parties
- Holiday gatherings
- Wine-night snacks

Move over, basic crostini these ultra-crispy smashed potato bites topped with
smoked salmon and lemon-dill cream are the ultimate party upgrade! 🥔✨
If you love lox bagels or classic potato pancakes, this bite-sized appetizer is
your new obsession. Boiling baby Yukon golds and smashing them flat with a glass
before high-heat roasting creates shatteringly crisp, jagged edges with a
fluffy, tender center.
Top each warm potato with cool lemon-dill cream cheese, silky cold-smoked salmon
ribbons, crisp cucumber rounds, briny capers, fresh dill, and cracked black
pepper for the perfect hot-and-cool crunch.
Ingredients:
- 1.5 lbs baby Yukon gold potatoes
- 2 tbsp extra virgin olive oil
- Coarse sea salt & black pepper
- 6 oz cream cheese (or crème fraîche), softened
- 2 tbsp fresh dill, finely minced
- 1 tbsp fresh lemon juice
- 6–8 oz cold-smoked salmon ribbons
- 1/2 English cucumber, thinly sliced
- 3 tbsp nonpareil capers, drained
Step-by-Step Method:
1. Boil & Smash: Boil potatoes in salted water for 15–18 minutes until
fork-tender. Drain and transfer to a parchment-lined baking sheet. Use the
flat bottom of a drinking glass to smash each potato flat (~1/2-inch thick)
to create jagged, craggy rims.
2. Roast Extra-Crispy: Brush potatoes with olive oil and season generously with
sea salt and cracked pepper. Roast at 425°F (220°C) for 25–30 minutes until
edges are deeply golden and blistered. Let cool for 3 minutes on a serving
platter.
3. Whip the Base: In a small bowl, whip cream cheese, minced dill, lemon juice,
salt, and pepper until fluffy.
4. Assemble & Serve: Spoon a dollop of herbed cream onto each potato, crown
with folded smoked salmon, tuck in a cucumber slice, and garnish with
capers, fresh dill sprigs, and cracked black pepper. Serve warm!
