Salmon really doesn’t need much. A little salt, pepper, and a good sear is honestly enough. But Malayali aayal… we somehow have to give it that naadan touch 😄🌿 And trust me, salmon with this spicy, peppery, slightly tangy Kerala-style masala is a different level! 🔥 Perfect with some hot rice and moru kachiyathu. ❤️ NAADAN SALMON FRY 🌶️🐟 For 600 g salmon, about 4 pieces: • 3/4 tsp salt • 1/2 tsp turmeric • 1 tbsp coconut oil Massage this directly onto the salmon and keep aside. For the naadan masala: • 6–8 garlic cloves • 3–4 shallots • Handful of curry leaves • 1 tbsp whole black peppercorns • A few strips of lemon zest • ½ tsp fenugreek • A small pinch of ajwain • Tamarind water, as needed • 1–1½ tbsp chilli powder, mix of Kashmiri + regular chilli powder Grind garlic, shallots, curry leaves, pepper, lemon zest, fenugreek and ajwain with a little tamarind water into a smooth paste. Mix in the chilli powder and coat the salmon generously. No need for a long marination since we’re using tamarind. Heat 2–3 tbsp coconut oil in a cast-iron pan, throw in some curry leaves and fry the salmon over medium-high heat for around 5–6 minutes per side, depending on thickness. The important part: don’t overcook it! Marinate the bombil with red chilli powder, turmeric powder, salt and lime juice or kokum extract, and let it rest for 15–20 minutes. Meanwhile, prepare the stuffing by grinding coriander leaves, coconut, ginger, garlic, green chillies, tamarind, onion and cumin into a coarse paste without adding water. Stuff each bombil generously with the green chutney and gently close it. Coat the stuffed bombil evenly with rava. Heat oil in a pan and shallow fry the bombil on both sides over medium heat until golden, crisp and cooked through. Recipe ⬇️⬇️ Ingredients • Fish pieces – 500 g • Oil – 2–3 tbsp • Turmeric powder – ½ tsp • Red chilli powder – 1½–2 tsp • Shallots – 8–10, crushed • Ginger-garlic paste – 1 tbsp • Curry leaves – 1 sprig • Tamarind – small lemon-sized piece, soaked in water and extracted • Salt – to taste How to Make Tawa Fish Fry 1. Heat a tawa or heavy-bottomed pan until hot. Add the oil. 2. Lower the heat slightly and add turmeric powder and red chilli powder directly into the oil. Sauté for a few seconds, being careful not to burn the spices. 3. Add the crushed shallots, ginger-garlic paste and curry leaves. Sauté well until the shallots soften and the raw smell of the ginger and garlic disappears. 4. Add the tamarind water and salt. Mix well and let the masala cook until it thickens slightly and becomes beautifully aromatic. 5. Place the fish pieces directly into the masala. Coat each piece well with the spicy mixture. 6. Cover and cook on medium-low heat until the fish is cooked through. 7. Remove the lid and continue frying, gently turning the fish pieces so they get coated in the masala and develop a slightly roasted, caramelised exterior. 8. Fry until the masala clings beautifully to the fish and the edges become slightly crisp. This Tawa Fish Fry is a simple, spicy and flavour-packed fish fry made directly on the pan with a delicious masala of red chilli, turmeric, shallots, ginger, garlic, curry leaves and tamarind.
