Chile Con Carne
Ingredients
• 4 dried ancho chiles, stems and seeds removed
• 2 chipotle peppers in adobo sauce
• 3 cups beef broth
• 2 tablespoons olive oil
• Salt and freshly ground black pepper, to taste
• 1 large yellow onion, chopped
• 1 red bell pepper, chopped
• 2 jalapeños, seeds and ribs removed, chopped
• 1 teaspoon minced garlic
• ½ tablespoon whole cumin seeds
• ½ teaspoon whole allspice berries
• 2 teaspoons smoked paprika
• 2 teaspoons dried marjoram
• 1½ teaspoons ground coriander
• 2 teaspoons unsweetened cocoa powder
• 1 (15-ounce) can tomato purée
• Fresh chopped cilantro, for serving
• Shredded cheese, for serving
Instructions:
Toast the dried ancho chiles in a large pot over medium-high heat, about 2 minutes per side. Pour in the beef broth, bring to a boil, then turn off the heat and let the chiles steep for 10 minutes.
Let cool slightly. Transfer the chiles and 1 cup of the broth to a food processor and purée until smooth.
Grind the cumin seeds and allspice berries in a pestle and mortar. Add smoked paprika, marjoram, coriander, and cocoa powder to the mortar and mix together.
Season the beef chuck with salt and freshly ground black pepper. Heat olive oil in a 5-quart heavy-bottomed pan over medium-high heat and sear the beef until browned on all sides. Let cool slightly, then cut into 1-inch cubes.
In the same pan, sauté the onion, bell pepper, and jalapeños until softened. Add the minced garlic and sauté for 30 seconds. Add all the mixed spices to the pan and stir to coat the vegetables.
Add the puréed chiles, the remaining steeped broth, tomato purée, and beef cubes. Stir to combine. Cover and simmer on low for 2½ hours.
Serve topped with fresh chopped cilantro and shredded cheese. Enjoy and follow for more 🫶🏻
