To be honest, I make fresh pasta probably more for myself than anyone, because once you have tasted rich, fresh, homemade pasta, the boxed stuff just isn’t as good… this is a simple pasta dough recipe that I use for any everything from fettuccine to ravioli! • 2 cups (250 g) 00 flour • 1 ½ cups (200 g) semolina flour • 4 whole eggs • 2–4egg yolks (4 makes it very rich and you will need to add a bit of flour most of the time but I like it rich) Method 1. Sift the flour into a mound on a board or countertop.(or use a bowl if preferred). Make a deep well in the center. 2. Add the eggs and yolks. Beat gently with a fork, pulling in flour gradually. 3. Knead 8–10 minutes until smooth and elastic. The dough should be firm, not sticky. 4. Wrap in plastic wrap and rest 30–60 minutes at room temperature. 5. Roll out with a pasta machine to thin sheets (setting 6–7, depending on machines use a @marcatopasta ). Cut into fettuccine (about 6–7 mm wide). 6. I used to be intimidated by homemade pasta. I thought it required special equipment, complicated ratios, and hours of work. Then I took a pasta-making class while traveling in Rome, and realized how simple it actually is. Since then, I make fresh pasta at home all the time. For one serving: ½ cup 00 flour | 60g 1 egg Pinch of salt That’s it. Multiply by however many people you’re feeding. Ideally, use “00” flour, it gives you a smoother, more delicate, authentically Italian texture. But regular all-purpose flour works perfectly fine too. Homemade pasta isn’t complicated. It’s just misunderstood. Once you start making pasta from scratch you just don’t go back! 🤎 Recipe: - Mix 100g flour and 1 large egg in KitchenAid with paddle attachment until combined - Add 14g olive oil and 14g water (no, we didn’t count water as an ingredient), replace paddle attachment with dough hook, and mix for 5 minutes until dough springs back - Wrap dough and let rest for 30 mins, up to an hour - Cut dough in 2, flatten slightly, and run through pasta maker to flatten to desired thickness - Cut flattened dough by hand or use pasta attachment - Cook for 1.5-2 minutes in salted boiling water, and enjoy! homemade ravioli or hidden veggie pasta?! green pasta: 250 grams 00 flour 2 cups baby spinach - blanched and squeezed dry 2 large eggs pink pasta: 200 grams 00 flour 1 cups beets, peeled and boiled (sometimes available in refrigeration aisle or canned works!) 1 large egg yellow pasta: 200 grams 00 flour 2 large eggs 1/2 teaspoon turmeric powder - be careful as this can stain clothes and countertops! tips: let the pasta dough rest 30 minutes prior to rolling out (keep covered at all times to prevent drying out) you can roll out by hand using or rolling pin or start the process with a pasta machine! if the latter, roll out the “base” pasta sheet to knob 6 and the “decor” pasta sheet to know 7. brush the back of each decorative piece with a little water to help it stick, then roll out the fully assembled pasta sheet to either knob 7 or use a rolling pin to have more control over the design! let shaped ravioli sit 10-15 minutes before cooking in salted boiling water for 1-2 minutes, until floats to the top and then cook an extra 30 seconds. floral design inspired by @thelabellalife <3 #homemadepasta #ravioli #whimsy #whimsical #summerrecipes
