I thought I was going to a sporting event.
Instead, I experienced 3,000 years of Irish history, county pride, and one of the most exciting atmospheres I’ve ever been part of.
My first hurling match was the All-Ireland semi-final between Clare and Limerick at Croke Park. Clare may have lost, but I left understanding why people say hurling isn’t just a sport—it’s part of Ireland’s identity.
Safe to say… this won’t be my last match.

It was a great honour to lead out the Dublin Pride parade, particularly on the 10th anniversary of the Marriage Equality Referendum which I think was a defining moment in Irish history, where we moved very significantly to an inclusive society where no one is left behind.

This leek and oatmeal soup is truly an ancient Irish recipe, even Irish monks were eating this in the monasteries in the 9th century, but of Irish history there for you!
It’s a simple and creamy soup and the perfect bowl of comfort.
Not many people may know this soup but honestly once you make it, you will love it!
Our recipe is based on a version from JP McMahons book ‘The Irish cookbook’, we love this book and it’s well worth a read.
Ingredients (for 4 people)
• 75g butter
• 3 leeks, sliced
• 400ml chicken stock
• 600ml whole milk
• 50 g pinhead or steel cut oats
• 100 ml double cream
• Parsley, finely chopped
• Sea salt and white pepper to taste
Method:
Melt butter in a pan over low heat. Add the sliced leeks and a big pinch of salt and cook for 15 minutes until soft, without browning.
In a separate pan, add chicken stock, milk and oats. Cook on low for about 30 minutes, stirring regularly.
Blend the oat mixture until smooth, then strain through a fine sieve.
Stir in double cream then pour the oat mixture over the cooked leeks.
Simmer for 10-15 minutes, season with salt and white pepper to taste.
Serve with chopped parlsey on top.
