For some reason I kept on saying Aramaic when it is actually Syriac. We use Syriac in our day to day language in the levantine.
What other words do you use that you speculate is Syriac

The Greeks have Socrates
The French have Napoleon
The Syrians have me ❤️🩹

Levantine Mujaddara 😍
The full recipe will be in my book Naturally Vegan (pre-order link in bio) 👏
Mujaddara is a Levantine staple, but is known as Mdardara in Lebanon and megaddara in Egypt. There’s an even more historic version of the dish, where bulgur is used instead of rice. You can easily swap one for the other and follow the same recipe.
The secret to a flavoursome mujaddara is carefully caramelized onions, which are used as a topping and mixed through the rice and lentils. A simple farmer’s salad such as Salata Falahiyeh (the recipe is also in my book) is usually served right on top of the mujaddara so the tanginess of the dressing and the crunch of the vegetables mingle with the rice and lentils. Absolute perfection.
This is Ep. 61 of Naturally Vegan, my series where I explore traditional plant-based food from around the world. Follow for more 🫶

Ka’ak el Eid are the biscuits that mark celebrations in our home. The biscuits themselves are delicate and lightly crumbly, with a soft sandy texture that melts almost instantly on the tongue. Inside, the filling is rich and fragrant, the dates gently spiced with cinnamon and nutmeg, while mahleb and orange blossom perfume the dough with a subtle floral warmth. Finished with a generous dusting of icing sugar, Ka’ak el Eid are meant to be offered to guests, packed into tins, and enjoyed over many days, carrying the feeling of celebration well beyond the holiday itself.

Serves: makes 32-35 ka’ak
Prep time: 1 hour (plus at least 12hrs resting)
Cook time: 18-20 minutes
INGREDIENTS
▪️1 kg fine semolina
▪️1 3/4 cups ghee, melted
▪️1 tbsp ground mahleb
▪️1/4 tsp instant yeast
▪️3 tbsp orange blossom water
▪️1 cup warm full-cream milk
Filling
▪️500g date paste
▪️1 tsp ground cinnamon
▪️1/4 tsp ground nutmeg
▪️2 tbsp olive oil
▪️2 1/2 tbsp ghee, melted
▪️Icing sugar, sifted, for dusting
METHOD
1️⃣Combine semolina, ghee and mahleb in a large bowl. Rub together with your hands until the mixture resembles damp sand. Cover and rest for at least 12 hours, or up to 2 days.
2️⃣For the filling, mix the date paste, cinnamon, nutmeg, olive oil and melted ghee until smooth. Chill briefly if too soft.
3️⃣Roll the filling into thin logs (about 8–9 mm thick) and set aside on a lightly greased tray.
4️⃣Loosen the rested dough with your hands. Add yeast and orange blossom water, then gradually work in warm milk to form a soft dough. Cover and rest for 1 hour.
5️⃣Preheat oven to 180°C and line trays with baking paper.
6️⃣Divide dough into golf ball–sized pieces. Roll each into a thin log (about 14–15 cm) and press a groove down the centre.
7️⃣Place a log of filling inside, pinch the dough closed to seal, then gently roll to smooth. Join the ends to form a ring and place seam-side down.
8️⃣Decorate the surface with a fork or tweezers to create the traditional pattern.
9️⃣Bake for 18–20 minutes until pale and just set. Cool completely, then dust generously with icing sugar before serving.

NO WAY!!! 😮
This is how Arabs react when they’re surprised.
In the Levantine dialect, you’ll hear reactions like:
What?! → شو؟ (shu?)
Really? → عنجد؟ (3anjad?)
Once you notice this, you’ll hear it everywhere 👂

In Levantine dialect ,we can say for,
بدّي - I want
بدّنا - we want
أحكي I am telling
يا زلمة -
while adressing a male
(not a boy, but a teenager)
These are my favourite words from Levantine dialect ♥️

Lebanon is resilience.
It’s waking up to uncertainty, yet still choosing to live, work, and love.
It’s warmth — not just the weather, but the people. The way someone checks on you, says “طمني عنك”, and truly means it.
It’s contrast: beauty and pain in the same moment. Mountains and sea, laughter and fear, all existing side by side.
It’s identity. A mix of languages, cultures, and stories that somehow create something unique and unforgettable.
And above all, Lebanon is home — not just a place, but a feeling you carry with you, even when everything around you is changing.
